This family property, which spacer Nice at an altitude between 150 and 450 m at the gates of the city, has been olive-growing for more than 80 years. It has more than 1 200 olive trees in its area, including 700 multi-centenaires and a few millennia. Trees with which the grower owners manufacture a single oil, the result of an assembly of olives from three different varieties. In addition to cailletier, picholine and manzanille are the other two varieties that fall into the nectar composition. It is in the nearby village of Tales, at the mill des Escaïouns, that the olives are pressed. At the request of the clientele, made up of big @ chefs, the Lessatini domain makes the choice of not complying with the PDO Nice.
Other products of the Area include: the olives of Nice PDO, which represent the heart of the production and which can be visited in the cellar, the olive paste, whose manufacturing process dates back to the 1980 s, and finally the cailletier olive jam, which rediscovering the olive in Nice under a salty sweet side of the most confusing.
