La Clémandine is an estate of 4.5 ha, all in "restanques", clinging to the hillside, protected from the coldness of the Mistral wind by "Le Baou de Saint-Jeannet", an enormous rock that dominates the village. Located in the geographical area of the AOP Olive de Nice, where the Cailletier is omnipresent, the domain is cultivated only according to the principles of Organic Agriculture. This oil is not filtered, just naturally decanted, by density difference. La Clémandine produces an organic PDO Nice, in 25 and 50 cl. Also a Nice PDO olive paste.
