But above all, no farmed fish! Alongside our flagship products, oysters from the Basin, we also offer lobsters from Brittany and seafood platters. In addition, the chef prepares a number of ready-made dishes and offers grocery products.

In the heart of the Arcachon Basin, in the oyster-farming village of Le Canon, Cabane 171 welcomes you to an exceptional setting overlooking the Dune du Pilat, for a tasting of meaty oysters, shrimps or whelks, all washed down with a glass of white wine. Jean-Marc Casteigt has been a "master craftsman saurisseur" since 1989. His talent and the quality of his products have been acclaimed by critics and gourmets alike, and he has received an award from the International Culinary Order. Every week, 60 to 70 fishes leave his laboratory, whole or sliced, to be distributed mainly in fish shops and delicatessens, in Aquitaine and in Paris. A passionate oyster farmer based in the small port of La Barbotière in Gujan-Mestras and working in the traditional way, Frédéric Paillère, a former agricultural engineer and production consultant, collects the spat, raises his oysters, sells them retail, wholesale and ships them all over France. His oysters are soft and fleshy, a real pleasure for the taste buds of oyster lovers. You can find Frédéric Paillère and his good oysters every Sunday in Lacanau town.

Moulin de la Cassadotte is the cradle of farmed caviar in France. The Caviar de Gironde trademark was registered in 1993. During a 1h30 guided tour, you'll first learn about the history of this former flour mill converted to sturgeon farming, and then discover the meticulous craft of sturgeon breeding - a species that looks like a prehistoric creature... At the end of the visit? The long-awaited tasting session and a detour to the boutique to buy some exceptional caviar. Tasting formulas are available all year round, starting at 12 euros.

Oyster farmers and producers, Yoan and Chloé Godichaud are based in the oyster village of Cap Ferret. Here, buy oysters direct to take away: Cap Ferret oysters bred on the shores of the Presqu'île, Banc d'Arguin oysters bred at the ocean's edge in deep water... With a higher meat content, the special oysters, matured in "balancelles" bags, won a silver medal at the Concours Général de Paris 2019. To be tasted on the Mimbeau conche, facing the Pilat Dune, every day during school vacations.

Michel Goicoechea is part of a gourmet route that passes through this exceptional Aldudes valley. A visit to the fish farm in this wild setting is a must. Fed on fishmeal-based feed, the trout grow harmoniously. From troutelle to portion or large trout, the beautiful ones are known as "rainbows". Visit and buy in the superb boutique, and find them cooked on the best tables in the Basque Country. Smoked trout, rillettes, terrines, coulis... All original recipes!

Magnificent store, the Cotinière is a fishmonger's shop impossible to circumvent in Pau whose mother house is on the island of Oléron. The fish and all the seafood come from Charente-Maritime and the variety is amazing. This artisanal cannery offers its products in its boutique-grocery in the center of Luzien, as well as in its Atelier-boutique on avenue de Jalday. It handcrafts a whole range of canned wild fish straight from the fish market. Thanks to the use of organically-farmed products, the preserves maintain the quality of the food. Sardines, tuna ventresca, mackerel, bonito... just waiting for gourmets!

Vents & Marées is the fishmonger you need to know. Don't be surprised, everyone has already spread the word, so you'll need to be patient before placing your order, especially during the festive season. For four generations now, fish, shellfish and crustaceans have been purchased directly from the auctions at attractive prices. The seafood platters (to order) are really top-notch. Vents & Marées prepares hot and cold dishes concocted by two professional chefs, and even sushi.

Aqualande is Europe's leading breeder-processor of freshwater trout. The group is also European leader in aquaculture fish breeding and world leader in trout breeding. Its Ovive range is certified Origine France Garantie. The SCA (Société coopérative agricole) des Aquaculteurs landais was created in May 1981. That same year, the first fresh trout packaging plant was installed. Today, you can enjoy smoked trout (Landvika brand), trout pavé, trout roe, salmon roe, sea bass fillet...
