Jean-Marc Casteigt, "maître artisan saurisseur" since 1989, is renowned for the quality of his products, which have won awards from the International Culinary Order. Every week, he prepares 60 to 70 fish, whole or sliced, for distribution to fishmongers and delicatessens in Aquitaine and Paris. His passion has been passed on to his children Marie-Sophie, Pierre and his partner Nicolas, who are now taking over this exceptional savoir-faire.
