60 kilometers north of Tapachula, the road that leads to the fincas cafeteleras installed below the Tacaná volcano takes you little by little to a world of vegetation that is still tropical, but with a cooler climate (the fincas are installed between 600 and 1,200 meters). The best way to fully enjoy the experience is to spend at least one day in the area and to sleep in one of the fincas that offer accommodation. There are many trails in the area where you can observe the fauna and flora, go mountain biking and horseback riding, and learn about the production and processing of coffee. In short, there is no time to get bored! Apart from Finca Hamburgo, which is one of the most important in the region, don't miss Finca Irlanda, Finca Chiripa and Finca San Francisco, all of which are within a 15-kilometer radius. Finca Irlanda has been certified as an organic and biodynamic coffee producer since 1967. Heading south on the road to Nueva Alemania, take the opportunity to stop and admire the San Francisco waterfall in El Eden, from which it is possible to raft down the Río Cuilco during the rainy season. It is possible to discover this remote region, and especially the fincas, within the framework of a guided tour, in particular with the organization Chiapas Tours & Travels (www.chiapastoursandtravel.com) which takes care of the transport as well as the lodging.
