Planted on a low limestone plateau, at the crossing of many roads, Saint-Jean-de-Minervois is an eagle's nest clinging to the causse. This singular village is surrounded by gorges and the bottom of one of them is the church of Saint-Jean-Dieuvaille built in the th century on the foundations of a former hermitage. It is so captured between high cliffs that it was nicknamed Saint-Jean-du-Hole. Around Saint-Jean-de-Minervois, there are large expanses of white limestone on which a vineyard râblée the plots surrounded by walls of pebbles, sometimes dug from a strange hut called capitelle.It is the land of Muscat de Saint-Jean, a small small grain that only has been able to adapt to these difficult conditions but which, in reward for the efforts of the wine growers, gives a sweet wine with exceptional aromas, classified as a controlled appellation of origin since 1949.
