A farm which ensures the force-feeding of fat ducks and the breeding of squabs. The duck livers are deveined and we advise you to taste them plain, fresh but not iced, accompanied by a mellow white wine. Forget the diet to taste the royal duck breast, a turnover of two duck breasts in which a foie gras has been cooked; the whole is eaten cold. As for the pigeon, it is also available in confits, gizzards, terrines and rillettes. You can also choose fresh squab, ready to cook, which you can cook yourself.

L'ENQUIQUILLEUR

Wine Cellar Wine House

Stéphane, or l'enquiquilleur, is a true enthusiast. Nicknamed "l'enquiquilleur" by his friends a few years ago, this nickname comes from his passion for good wines and his enthusiasm (perhaps too overflowing?) in pointing out which wine or place to choose for a good tasting. So, the name chosen for this place that's part wine cellar, part wine bar was just right! He welcomes us and advises us in a relaxed atmosphere in the heart of the Saint-Donatien district. The wines are mainly natural, clean and lively. He favors local production and doesn't necessarily work with big winemakers. He is especially attached to producers and artisans who are free of chemicals and frills. Once a month, he organizes evenings to promote contact and exchange with his customers. Oyster and wine tasting, food and wine pairings, aperitif oenology or even improv theater. He brings the neighborhood to life for all to enjoy. Don't hesitate to ask his advice, he'll find just what you need!

Château de La Ragotière wines feature the 3 emblematic grape varieties of the Nantes vineyards: Muscadet, Chardonnay and Sauvignon Blanc. What's more, the Couillaud brothers had the brilliant idea of bringing grape varieties from other regions and planting them in the Loire. Soil and climate different from their region of origin give them an astonishing typicity... Let yourself be surprised by their Riesling, Viognier or Petit Manseng. Note that the estate will be converting to organic farming in 2019. Great discoveries to be made in a magical place! Among the estate's favorites: Muscadet Sèvre-et-Maine sur lie Cuvée Amélie 2018. Winery

Edouard Pisani-Ferry. On the edge of the departmental line along the Loire, right in the village exit, above the direction Saumur-Montsoreau. Superb site that Celui, a small, delicate castle located on the hillside, consists of a body of solid houses framed with four square towers, intimately embedded in the bright blonde and bright rock. Edouard Pisani is the descendant of a large family and his predecessors have historically settled here since 1655. It was a hunting residence of King Louis XIV's personal secretary, who, over the centuries, had many republican and resilient antibonapartistes, as well as many ministers or mps. The 24 hectares provide the châtelain winery with three beautiful vintages of champigny. The "Targé", high in stainless steel tanks. More powerful, Cuvée is high in barrels and bottled in the second spring following harvest. This attachant character is a local figure that animates local news and wine growing by documenting and sharing thoughts about metaphysics, psychology, politics, societal facts, and is the "local correspondent" of wine and ecological news with humour and foresight.

We have tasted:

1/Saumur blanc 2005 the Fresnettes. COUP DE COEUR: a clear yellow dress and a white fishing nose with a touch of honey and lemon that gives him an extravagant length. A beautiful minéralité and a well-controlled balance. Accompanying suggestion: Burbot with orange zests candied.

2/saumur-champigny 2005 Castle of Targé at 7,50 €.

COUP DE COEUR: for the gourmands it will be enchantment, roundness, roundness fruit, notes of blond tobacco and honey. A very beautiful wine. Accompanying suggestion: Calf piccata or calf roulade with stuffed mushrooms.

3/saumur-champigny 2004 Quintessence at € 17. COUP

DE COEUR: a beautiful guard wine whose réglissées notes last in the mouth on a well-balanced structure. Accompanying suggestion: tournedos Rossini.
