History: The Sancerre region invites you to discover Sancerre, a PDO wine produced around Sancerre, located in the Cher department, available in all three colours. These wines, classified since 1936 for whites and since 1959 for reds and rosés, have made the reputation of this wine-growing region. The vineyard extends, on the left bank of the Loire, over approximately 2,770 hectares and 14 communes: Menetou-Râtel, Ménétréol-sous-Sancerre, Bué, Crézancy-en-Sancerre, Montigny, Sainte-Gemme-en-Sancerrois, Sancerre, Chavignol, Saint-Satur, Sury-en-Vaux, Veaugues, Verdigny, Vinon and Thauvenay. The vines have colonized more or less curved slopes, which give the landscapes of Sancerre all their typical character. Be aware that White Sancerre is perfectly suited to Chavignol manure, but also fish, shellfish and crustaceans. Its combination is perfect with warm, slightly spicy starters. Ferme des Petites Vallées invites you on a journey through time, to a past turned towards the future. The location is idyllic, between the Briare canal and the Loing, as Alexandre Ducardonnet explains. The tricks of the trade were passed down to him by a cider-maker, a producer for five generations who left nothing to chance. The range is made from 100% orchard apples, untreated thanks to the hardiness of the varieties. Likewise, no sulfites or other additives are added to the production process. From the tree to the bottle, everything is untreated, as guaranteed by the "100% natural Petites Vallées charter", which everyone is invited to check at any time. Sour apples and bittersweet apples are used to make this special Gâtinais cider, brut or demi-sec (and special cuvées). The rather acidic nature of the apples excludes the astringency and bitterness found, for example, in Norman and Breton ciders. Connoisseurs will quickly notice the difference. The range also includes Gâtinais cider apple juice (which can be drunk hot or cold) and cider vinegar, the fruit of a long process that can take up to three years. The cultivation of apples and the manufacture of cider are linked to the history of the East Gâtinais. In many municipalities, unfortunately, production belongs to the past, with the grinding being used for decorative purposes. A few small family enterprises resist and continue, fortunately, to propose the Fermier farmer cider, developed in accordance with traditions. Daniel Canault is of those who are committed to perpetuating the cidricole heritage. Within its 180 hectare farm (shared between cereal cultivation and nursing), it has preserved a space of about 15 hectares for the orchard. Part of the harvest (13 hectares) leaves to the big cider but took care to reserve a fruit hedge of local varieties bathed for its own production. The result: a real local product, a half-dry and crude agricultural cider whose fermentation and foam outlet are carried out in a natural way. You will find this producer and others of his sweets (apple juice, vinegar) on some local markets, including the Terroir-sur-Loing market, the first Sunday of every month (except January). This estate operates 13 ha of vineyards spread over the plain and hillsides. The vineyard converted to organic in 2018. The grape varieties used are Cabernet Franc for the red and rosé wines and Chenin for the white wine. The diversity of the soils and the age of the vines (from 20 to 80 years old) allow us to offer a variety of vintages, aged in vats, barrels or even in a terracotta egg. The wines of the plain are fruity, while those of the hillsides, more complex, are rather intended for aging. The domain also produces wine confits and grape juice.

In the south of the department, in a region called Boischaut-Sud, the vines of the Geoffrenet-Morval estate are distinguished by the combination of sandy-silty red soils, from which delicate red wines are produced, and less silty soils, for aromatic rosés.
