Just a stone's throw from the Loire by bike and the beautiful Divatte river. It's well worth making the detour to this village to discover this craftsman's sublime creations. Through family tradition, Jérémy grew up in the restaurant business (through his parents) and chocolate-making (through his uncle and aunt). This was followed by a CAP in pastry-making and, one thing leading to another, a successful experience with Vincent Guerlais. But also within the prestigious "Relais Dessert" circle, with its demanding, qualifying training. In January 2022, Jérémy opened his own boutique to the immense pleasure of gourmets! He'll be creating intense chocolate éclairs, chocolate caramel entremets and tiramisu verrines. But also delicate macaroons, gâteau nantais, madeleines and sublime viennoiseries for children's snacks! Everything is handcrafted on site and 100% homemade. The chocolate range, with its 14 delicate flavors, as well as the grand cru chocolate bars, are all homemade. Other sweet treats include beggars and chocolate balls. We can't wait for the marshmallow teddy bears and other boxes of bite-sized chocolate treats announced for the festive season. Of course, Jérémy also caters for the needs of private and family events: weddings, receptions... A young, hyper-creative artisan with no shortage of new ideas and projects. Christophe Vasseur is an adorable boy, cheerful, passionate and talented. Commercial in fashion, he left behind everything to get a CAP in bakery and realise his dream. His ancient style shop is decorated with coasters, rustic ceiling drawings that dates as far as the year 1889 and the tables are decorated with ancient copper moulds. It is lovely and it perfectly corresponds to the spirit of the boss: tradition in modernity. He researched ancient recipes and adapted them to today's style. All breads are baked on stone, as in the past, this is what gives them the flat bottom and the thick crust which guarantees excellent preservation. He invented gastro bread like the Rabelais for foie gras, apple Pagnol for Vacherin. His «Pain des Amis» is a very flat bread, very crusted, the apple turnover is topped with apple and no compote, and as for its brioche with orange blossom, it is inspired by a recipe from North Africa. He thinks of stopping the French loaves so as to make only bread made from ancient and rare flour.

Every month, the store window changes according to the seasons, the holidays and the news from Nantes. Among the many creations, let's mention the Muscadettes nantaises (a ganache with muscadet brandy) or the macaroons (coffee, chocolate, Grand Marnier, blackcurrant, caramel, passion, lemon, etc.). The house also makes delicious florentines, these nougatine and candied fruit palets placed on a chocolate disc. Original creations of impeccable quality. Try the home-made chocolate bites like the Duchesses (orange ganache, caramel coulis and pistachio almond paste). Created by Mr. Coutant, the Anne de Bretagne crowns (70% cocoa, raisins, almonds and hazelnuts) have become famous. One comes of course to discover the traditional chocolates house, but also the chocolates of origins (Ivory Coast, Vietnam, Costa Rica, Peru and the innovations 2022 with Uganda or Papua. Always with the surprising Equacacao directly from Ecuador from the producer to the processor! In boxes, bags or bars, we succumb to the pleasure of chocolate. The Coutant fondant (chocolate fondant with 64% cocoa from Peru, chopped roasted almonds: excellent!) is a hit. Try also the new shortbread with raspberry inserts... In summer, homemade sorbets are available for our greatest pleasure. In 2022, we can now enjoy the new Nantais Coutant cake (4 or 6 parts according to the gourmands).
