If the Beauceron Philippe Millet settled at the Marcault Farm in the middle of the 60's, he only created the Millet Estate fifteen years later, as some of the land he cultivated in cereals was eligible for different AOC of the Chablis vineyard. Since then, Philippe has left the reins to his children Paterne and Baudouin, who now cultivate 14 hectares, including 9 in AOC Petit Chablis, 4 in AOC Chablis and 1 in AOC Chablis^1er Cru Vaucoupin. This oil mill built in 1850 has been passed down from generation to generation. Today it is managed by Roselyne, the founder's granddaughter, assisted by her nephew Jean-Luc. As harvesting owners, they run a local olive grove and produce a great PDO oil that has been awarded several times. A small museum shows the flour mill of yesteryear and a video film retraces the stages of the oil mill. In the store, you can taste and buy olive products. This farmer in Issoire region is a newcomer to the Saint-Pierre market. A member of the La Daffodil association, defending organic products, Mr. Baubert sells products from his own livestock products, all fed with home-made foods. Some may already have seen it at Saint Joseph Hall or elsewhere. Its chickens, guinea fowl, cans, rabbits are excellent. In addition to this prize winner, Oies and turkeys are added. An organic vineyard since 2009, Domaine des Trouillères is a forerunner in the region. The 6 ha of vineyards produce wines of character that testify to the excellent work of Jean-Pierre Pradier, the former owner, and his successors, Camille and Mikael Hyvert, who arrived in 2016. Convinced that a wine should be as natural as possible, this couple, keen on archaeology, even experiments with vinification in earthenware jars. The shop is modern, and you'll even find kitchen utensils and decorative objects.

In the salt marshes of Aigues-Mortes, ten salt workers perpetuate a tradition handed down from generation to generation, managing the movement of the water according to the weather. It is in summer, when the wind stops blowing, that millions of salt crystals form on the surface of the water. The salt workers then come to harvest the Fleur de Sel de Camargue manually. You can visit the salt pans on foot, by bicycle or by train and even participate in the harvesting of the Fleur de Sel. To take some home with you, find the salts produced on site in the dedicated store.

Domaine Champeau covers 18 hectares of Sauvignon Blanc vines and 2 hectares of Chasselas. Franck and Guy Champeau, two cousins, are the estate's third-generation winemakers.
