A proponent of home-made dishes, the chef of Asian origin has a perfect mastery of the black pork of Bigorre and the fattened duck, modernising traditional cuisine with assertive references to world cuisine. Wines and Armagnacs naturally accompany the dishes because, at L'Arrière-Cuisine, the Gascon way of life is celebrated.
