THE CLIMATES OF THE BURGUNDY VINEYARDS
Read moreOn July 4, 2015, the Climats du vignoble de Bourgogne were inscribed on the Unesco World Heritage List. The Côte de Nuits and Côte de Beaune and their more than 1,200 parcels of vineyards called "climats" are recognized as unique in the world for their diversity, as is the historical heritage they represent. The cities of Dijon and Beaune, as well as the nearly 40 wine-producing villages, are true elements of heritage to be discovered. The basis of this recognition: a very fine terroir vineyard, which has been built over 2,000 years of history and which has given birth to a unique landscape, heritage, know-how and culture.
The inscription on the Unesco World Heritage list commits all the actors of the territory to preserve and enhance this cultural landscape, this exceptional heritage.
The Association des Climats du vignoble de Bourgogne undertakes many actions to protect the site and to help understand this international recognition. A program of enhancement of village entrances and restoration of low walls (there are 220 km on the perimeter of the climats) was launched 3 years ago. Emblematic landscapes such as the hill of Corton are protected, and others, linked to the exploitation of Burgundy stone, such as slag heaps or quarries, are developed to better blend into the landscape. An inventory of the cellars is also underway.
For the visitors, a tourist signposting marks out the road of the Great Growths of Burgundy from Dijon to Santenay, the preferred route to discover the Climats.
The creation of the Maison des Climats du vignoble de Bourgogne, located at the tourist office in Beaune, Porte Marie de Bourgogne, allows visitors to understand how the notion of terroir was built in Burgundy and why the Climats represent a treasure for humanity. On site, a film on a large screen, a 9-meter model of the vineyard and digital tablets are useful and modern teaching aids.
The Climats of the Burgundy vineyard will soon be discovered at the Cité Internationale de la Gastronomie et du Vin in Dijon and in a large dedicated space in the Cité des Climats et des Vins de Bourgogne in Beaune.
This year celebrates the 50th anniversary of the World Heritage Convention. For this occasion, the 9 Unesco sites of Burgundy-Franche-Comté have imagined "aperitifs with a VIEW" for each Friday evening in June, combining exceptional heritage, panorama and gourmet food.

Based in La Rochepot, in the Hauts-Côtes region, this area is now over 17 hectares, in Auxey-Duresses, Saint-Romain, Beaune, Pommare and Saint-Aubin. It produces 12 different names, including two first vintages: Saint-Aubin "Les Castets" and Beaune "Les Chouacheux" and a crémant. 40% of the wines, all high in oak barrels, are white. Jérôme Billard works in reasoned culture without herbicides, with natural yeasts. It organizes, twice a year, open doors in partnership with wine growers and producers from other regions. Their purpose: «Express the typical of the land».

Read moreThis area is the result of five generations of wine growers. Régis Bouvier is the fifth generation and settled on the Burgundian land of Await in 1981. The 16 ha of the hotel's ha include Dijon, Await, Gevrey and Fixin. Very respectful of the earth and the environment, Régis Bouvier carries out the harvest manually and spent the whole of his operation in rational agriculture. The BIVB runs "L'Ecole des Vins", which offers fun but studious training courses for wine lovers who want to learn more.

DOMAINE OLIVIER VAN HECKE

On less than 3 ha of vines, 30 000 bottles per year are produced in the field: wines (white Burgundy, red and rosé), but above all crémants (white burgundy, white white and rosé). To give them a very special signature, Olivier van Hecke's white crémants come from a pinot noir and Pinot noir which gives them balance, complex aromas and finesse in the mouth.

The small 2 ha farm practices traditional methods and favors quality over yield. Excellent value for money. According to the days of the visit, you can be accommodated at the estate's vault or in the family house of the neighbouring Grand Rue. In both cases, the condition offered will delight you. During the tasting, you will discover the Santenay Village Clos Bellefond, the house's flagship, typical wines of the Côte de Beaune having a monopoly and which extends on 1.5 ha vineyards amidst the property. We also advise you to reserve the wine-cheeses tasting which can be an opportunity to taste Cîteaux's cheeses with Chassagne-Montrachet Premier Cru Morgeot, a perfect meal and wine pairing.
