PARIGOT CREMANT DE BOURGOGNE

Winery

Emile Parigot was one of the first fungi in Burgundy in 1907. Five generations later, this tradition is always present in the domain headed by Grégory Georger. Over 70% of the 200000 bottles produced are produced from vineyards grown by the area. A real "domain" approach for both vineyards and production. You can taste the Crémants in a nice little cellar where tables can accommodate small groups. Ready for the demo? 7 cups, some vintages, different assemblies. Learn that everything is done in the field, winemaking, handling and museling. It's very spectacular and interesting when you can attend. The Crémant Parigot sold in 2018 are mostly from the 2013 harvest. The small courtyard in the area allows easy parking. There is always someone to welcome you but it is better to make a appointment to optimize your visit.

THE CLIMATES OF THE BURGUNDY VINEYARDS

Winery

On July 4, 2015, the Climats du vignoble de Bourgogne were inscribed on the Unesco World Heritage List. The Côte de Nuits and Côte de Beaune and their more than 1,200 parcels of vineyards called "climats" are recognized as unique in the world for their diversity, as is the historical heritage they represent. The cities of Dijon and Beaune, as well as the nearly 40 wine-producing villages, are true elements of heritage to be discovered. The basis of this recognition: a very fine terroir vineyard, which has been built over 2,000 years of history and which has given birth to a unique landscape, heritage, know-how and culture.

The inscription on the Unesco World Heritage list commits all the actors of the territory to preserve and enhance this cultural landscape, this exceptional heritage.

The Association des Climats du vignoble de Bourgogne undertakes many actions to protect the site and to help understand this international recognition. A program of enhancement of village entrances and restoration of low walls (there are 220 km on the perimeter of the climats) was launched 3 years ago. Emblematic landscapes such as the hill of Corton are protected, and others, linked to the exploitation of Burgundy stone, such as slag heaps or quarries, are developed to better blend into the landscape. An inventory of the cellars is also underway.

For the visitors, a tourist signposting marks out the road of the Great Growths of Burgundy from Dijon to Santenay, the preferred route to discover the Climats.

The creation of the Maison des Climats du vignoble de Bourgogne, located at the tourist office in Beaune, Porte Marie de Bourgogne, allows visitors to understand how the notion of terroir was built in Burgundy and why the Climats represent a treasure for humanity. On site, a film on a large screen, a 9-meter model of the vineyard and digital tablets are useful and modern teaching aids.

The Climats of the Burgundy vineyard will soon be discovered at the Cité Internationale de la Gastronomie et du Vin in Dijon and in a large dedicated space in the Cité des Climats et des Vins de Bourgogne in Beaune.

This year celebrates the 50th anniversary of the World Heritage Convention. For this occasion, the 9 Unesco sites of Burgundy-Franche-Comté have imagined "aperitifs with a VIEW" for each Friday evening in June, combining exceptional heritage, panorama and gourmet food.

Finally, the festival of the Month of Climats returns from June 3 to July 17: an unmissable event full of more than 50 activities, tastings, workshops, unusual visits, conferences and shows. One more opportunity to celebrate, in the Burgundian art of living!

DOMAINE POLETTE

Winery
Closed - Open to 09h00

The Domaine Polette created in 2012 is not a young domain. Its vineyards come from the vineyard created by the Cistercian monks of the Abbey of Cîteaux. Pascal Polette, who has over 25 years of experience in wine and wine making acquired in Côte de Nuits or Côte de Beaune, has just taken over the last vineyards of the Val de Saône to produce organic and natural wines. More than 3 ha of vineyards planted in Biodynamie between Broin, the Château d'Auvilars sur Saône and Haris Echezeau. The last winemaker in the Val de Saône, Pascal Polette is in charge of preparing natural wines without sulphites. A white and a red, two PGI at special assemblies. Le Blanc is produced from 1/3 of Melon, 1/3 Chardonnay and 1/3 from Aligoté. The Red has 20% of Gamay alongside Pinot Noir. Culture as vinification is very natural, manual harvest, no dégrappage, manual pressing, no drawing or filtration and very few sulfite. The wines are to drink within 5 years, they are typical, the white a little disturbed because it brings new flavors. Pascal Polette is pleased to welcome you in his small cellar at Yathotou le Château.

WHISKY MAC MALDEN

Liquor store
Closed

Mac Malden is a young brand of whiskey born next to Beaune. With his Scottish accents, this name goes back to the origins of the Maldant family, that of an English Lord. Jean-Luc Maldant, who is now the owner of Domaine Maldant Pauvelot, has wanted to create a whiskey with Burgundian roots. After several years, the brand became that of a range of 5 whiskys to the burgundian touch. The "juice" is selected from a blender master from a Scottish Spey Valley distillery. The birth of the Charolay's Speyside, the single malt of 12 years old aged in bourbon barrels and refined in the barrels of Corton sealed a marriage between the culture of wine and whisky. The Mac Malden are packaged in small round bottles of 50 cl to the glass caps made in Burgundy. From the family grew up with a Highland, the White Bresse, single malt aged in chardonnay drums. The Mac Malden thus declined Burgundy's touch with a bestiary: the bull of the Charolais, the Bresse chicken that will be followed by Morvan trout, Morvan's Trout aged in barrels of Corton Charlemagne and slightly rosé. For whirlpool lovers, there is Black Malden, with the effigy of the black snail, as well as a blended bloggy. Then was born a «home» gin, the M, «The Gin from burgundy By Mac Malden», distilled in Burgundy in Dijon based on three origins of juniper berries with a yellow lemon zest to give freshness. Finally, «The Cognac des Voyageurs» on the nose of rum complements this range, a cognac developed in partnership with the famous Moisans distillery in Charente. It is the company of the Great Wines of the Old World based in the domain that distributes these alcohols supplemented with products in trading of the most beautiful signatures, Deau, Viche Pitia…

But in the region where Burgundy wines are kings, Didier decided to open new horizons with his wines from Israel, Australia, Italy, South America and the North… The other strong point of the shop concerns strong alcohols: rum, vodka, absinthe and whisky. Again the bottles come from all over the world. Not only is it an opportunity to discover new flavours, but the bottles are often stylized and rare enough to be preserved. Not forgetting wine-related accessories such as the carafes that are also found on site.

The value of these sales is that they offer discounts of up to 50% on excellent bottles, prestigious houses (Ruinart, Guigal, Mollard, Minuty, Jablonski, and the great castles of Bordeaux…) as unknown owners whose value rises. Moreover, wines put on sale are selected by a committee of experts choosing wines according to two criteria: quality and price. Deliveries are made within 8 days for France. A smart way to make a nice cellar by making good shots all year round.

BIVB - BUREAU INTERPROFESSIONNEL DES VINS DE BOURGOGNE

Sale of wines and spirits
Closed

The BIVB, Bureau Interprofessionnel des Vins de Bourgogne, a 1901 association, founded in 1989, brings together under its umbrella all the players in the region's wine industry: winegrowers, cooperators and négociant-breeders.

The BIVB aims to give a common axis to the wines produced in the region. Raising awareness, promoting, organising, selling and making known, this is the credo displayed. To preserve the assets, the quality and the specificities of Burgundy wine in a context of increasing internationalization of markets. The initiatives are aimed at both branches of the industry (production and sales) as well as at both ends of the chain (from producer to consumer). The website www.vins-bourgogne.fr has become a veritable encyclopaedia for everyone's use. Discover the Burgundy of wines, understand the aromas, the Climates, manage your cellar, know the agenda of wine festivals, know who are the winegrowers members of the Charter "de Vignes en Caves" who pamper their visitors, in short, know everything.

The BIVB runs "L'Ecole des Vins", which offers fun but studious training courses for wine lovers who want to learn more.

The BIVB will be in charge of running the future Cities of Wines and Climates of Burgundy in Beaune, Mâcon and Chablis. Opening to the public in the spring of 2022

DOMAINE OLIVIER VAN HECKE

Winery

On the Crémant road, all Van Hecke productions are carried out in an artisanal and manual manner (including the work of the vine), only bottling is processed by a claimant for unblocking and not. The rates are still very attractive. Olivier van Hecke was set up more than years ago in Châtillon-sur-Seine as a collecting-sur. Trained in agriculture, passionate by his land, he chose to take part in the renaissance of the region's wine-growing past, and in particular that of Crémants Du whose finesse and originality are sometimes worth a champagne. On less than 3 ha of vines, 30 000 bottles per year are produced in the field: wines (white Burgundy, red and rosé), but above all crémants (white burgundy, white white and rosé). To give them a very special signature, Olivier van Hecke's white crémants come from a pinot noir and Pinot noir which gives them balance, complex aromas and finesse in the mouth.
