From the original mill built in 1626, an authentic chapel press still remains. In 1920, the mill was transformed into a cooperative. Today, 450 members come to have their olives pressed in this impressive mill capable of crushing 5 tons per hour! Four types of oil are made here. The shop also sells tapenade, olive jars, white Camargue rice, Camargue salt and gift boxes.

Today, the Rossi family, who have owned the mill for sixty years, continue the tradition of olive growing in the village, which has no less than 420,000 olive trees. The mill has of course been modernized, with state-of-the-art equipment, but the architecture of the building has remained the same. In the adjoining shop, you can discover the mill's oils, whose bottles bear the famous "golden drop". And for tableware, you will find in the shop the essential garlic peeler, and objects made of olive wood.

It is the reference of cooks and good food lovers. Salts (in all its forms, of any planet, flavoured or not), spices, honey, jams, infusions, condiments, rice, mushrooms… the shop of Laure and Stéphane abounds in carefully selected products. By the way, the two owners speak passionately about it and they will give you many advice for their use. A good address attentive to its guests.

Florent Rueda breeds 150 saanen goats, Swiss goats whose mild, slightly sweet milk gives special flavors to the cheeses made and matured on site by his mother, Marie-Paule. These include dry, semi-dry and whole-milk brousse, as well as specialities such as St Rémois, a fresh lactic, and Alpicrème, a flowery crouté. These cheeses are on sale on the premises, and can be found at the finest restaurants in the region, including Château d'Estoublon.

The oil of Jean-Philippe Montagard is regularly praised at the General Agricultural Competition in Paris, but also praised by lovers of the green gold of the Vallée des Baux. Produced from typical varieties of the terroir (grossane, aglandau, salonenque and verdale), olive oils are stamped PDO Vallée des Baux de Provence and comes in two varieties: the green  with more herbaceous taste, and the black with flavours of ripe olive. Jean-Philippe Montagard and his wife Chantal also offer an organic version of their oils. But also green and black tapenades, pulp of green olive with basil and with tomato.

A large, friendly surface, on a human scale, where you can find what you need and sometimes even the accessories. The store has many agreements with local producers, which means that there are many regional products. The fruit and vegetable department is well stocked. The day we passed by, the wait at the checkout was unfortunately a little long, but it is becoming the lot of many supermarkets. In any case, the staff was very patient with a few complainers. It should also be noted that the car park is not very large.

Located in a beautiful setting at the foot of Alpilles, Domaine des Terres Blanches has been cultivated in organic farming since its creation. Ask for some explanations at the estate (5-minute drive from the centre of Saint-Rémy towards Eygalières). And then, since you are there, you will be tempted by a free tasting within the brandnew wine shop where Isabelle and Jennifer wait for you. A vault with fancy decoration where noble materials mix together: wood, metal... You will also find on the spot a selection of local products. Also use your visit to take a stroll (free tour of the vineyard with companion guide). On arrival of these waymarked walks (which lasts approximately one hour), the natural vine culture and the vinification methods will no longer be a secret to you.

Today, it is the two sons of the latter, Jean-Pierre and Jacques, who have been at the helm of this field in the family since 1913. They grow their 3 000 olive trees planted on about twenty hectares with care: weeding, fertilisers, reasoned irrigation, etc. With fruits, they manufacture a PDO oil Vallée de Baux-de-Provence.
