The olives are pressed in a traditional mill: the crushing is done by sandstone millstones, then the pressure in woven baskets or scourtins. The oil is made from four varieties of olives: salonenque, grossane, aglandau and picholine.

At the Domaine de Lagoy, established as a marquisate at the beginning of the 18th century and controlled by a castle classified as a historical monument, the descendants of the Meyran family, who have owned the property for nearly 340 years, run an 18-hectare vineyard planted in 1976, which has been converted to organic farming since 2001. In the cellars of the estate, red, rosé and white wines are produced and sold for export, but also in the store located on the Boulevard Marceau, in downtown Saint-Rémy.
