Christophe Urios, renowned rugby player and coach, spent his youth in the world of wine, graduating with a BTS in viticulture and oenology. It's only natural that, surrounded by his family, he should have taken over Château Pépusque in the heart of the Minervois region, where his father was steward. With his motto "never stop being better", he takes advantage of the estate's 18 hectares of rich soils and practices viticulture that respects nature. Aiming for excellence, his AOP Minervois and AOP Cru La Livinière ranges already grace the region's most renowned tables.

Here is an address which will fill with happiness many people. Located on the small port of La Redorte, Le Spot combines a restaurant, a wine bar and a cellar-grocery store offering no less than 240 references of wines, spirits, beers of the region and local products at producer prices. You can taste on the spot ? choose your bottle and add 5 € of corkage fee, the wine by the glass is of course proposed. The domain of Auzines owes its name to persistent oaks whose acorns and small leaves are agitated over the vineyards. All grapes harvested on the field are typical of the Corbières: Carignan, Grenache and Syrah, and Bruno Bernet, the enologist and winemaker of the domain, he focuses on improving the quality of its red vintages, thus; he enhance the soil and limits production to the best mature grapes. Fleurs de Garrigues is the main vintage of the domain, its cassis and blackberry flavors perfectly blends with rosemary, thyme, lavender and broom, which are typical of the surrounding scrubland. The domain offers a warm welcome, and the tasting of their AOC is a pure delight.

Château Pech-Latt is one of France's pioneering organic winegrowing estates, dating back to the ^8th century, in a landlocked area nestled in the Corbières mountains. Pech-Latt, Occitan for "top of a wide hill", is named after the rolling hills on which the estate stretches. The jewel of the Corbières, with 160 hectares of organic vines and rich, voluptuous wines, in a land of sun and wind, Pech-Latt stands for the authenticity of committed wines, expressing the passion and respect of men for their terroir!

Of the six children, Luc Pasquiet was the only one who wanted to take over his parents' estate. It must be said that he discovered the olive-growing profession at the same time as they did: he was at secondary school when his parents started olive-growing in the 1980s. While helping them with the harvest, the idea gradually took root. When his parents retired, he took over the olive grove scattered in several parcels around the village, and in particular behind the abbey which is the charm and fame of Lagrasse. That's about 7 hectares of trees, the oldest of which are a hundred years old. While his parents favoured integrated farming, Luc chose to go organic and began converting the estate to the AB label as soon as he arrived in 2013. A year when the fly was particularly bad and his entire harvest was lost. However, Luc Pasquiet is still faithful to his post: on the Lagrasse market on Saturday mornings, but also in his little shop at the foot of the old bridge. There, he offers four single-variety oils in fruity green: olive, a rustic variety typical of the Languedoc, the lucques, with which he also makes table olives, the bouteillan and the picholine. The "cuvée du terroir" is a green fruity made from a blend of what the other cultivated trees produce (aglandau, cailletier, arbequine). As for his olive pastes (without capers or anchovies), he makes them in his workshop and integrates, according to his recipes, the vegetables he grows in his garden.

In 2010, Mathieu and Anaïg created the Chèvrerie la Rove de Fa in the heart of the Hautes Corbières, in a wild environment of beautiful forests and meadows. From the outset, the avowed aim of these farmers and naturalists was to practise organic farming in order to preserve biodiversity and revive a breed that was then in danger of extinction. Daily milking of the herd's sixty or so goats enables the production of top-quality farmhouse cheeses. Meat from kids reared under mother's milk is the other product offered by this goat farm.

Promoting short circuits! That's why 8 local producers have decided to open Le Comptoir des producteurs. You'll find their products, as well as those of many local winegrowers and farmers. On the shelves of this small locavore supermarket, seasonal fruit and vegetables, farmhouse ice creams, cheeses, yoghurts, charcuterie, meats, honey, gingerbread, olive oil, bread, wine, eggs, pasta, jams and cookies await you for 100% local shopping.

Created in 1932, this artisanal pastry and chocolate shop is now in its fourth generation. The welcome, in this beautiful store located in the heart of the city, is warm and the advice judicious. All the cakes and chocolates made, if possible from products in short circuit, are pure delights. The house specialties are the fouace aux pignons, the classics such as Paris Brest and Saint Honoré or more trendy ones such as the Royaltie, chocolate mousse and praline crunch. At Easter or Christmas, the house chocolates are very appreciated.

Château Grand Moulin offers excellent AOP Corbières and Cru Boutenac wines. On Wednesday mornings, from mid-July to mid-September, upon reservation, you can discover the vineyard during a walk, enjoy a winegrower's snack and a tasting. During the year, Château Grand Moulin welcomes you in a beautiful way and offers you a visit of the cellar and the tasting of its last vintages. It is also possible to reserve, for private or professional events, the reception room, fully equipped, in a modern and pleasant setting.

Since the 80's, the Greuzard family dreamed of making wine. This was done in 1987 with the purchase of parcels of carignan in Sallèles-d'Aude. The development of the farm continued in 2001 with the purchase of the Domaine de l'Herbe Sainte. On their land, the winegrowers produce in a reasoned and environmentally friendly way. It is also at the Domaine de l'Herbe Sainte that 4 superb, spacious and well appointed gites are offered, facing the beautiful swimming pool.
