Created in 1928, this aperitif based on cinchona, spices and herbs has been part of every meal and festive evening. Today, almost a century after its creation, Aurélien Carrelas, a native of Audois who loves his land, has developed the product in three versions. You can enjoy them on the premises as cocktails or just chilled, accompanied by boards to share. Local beers and wines add variety to the experience. DJ night on Thursdays in July and August. Saturday market returns at 11am, with wine and oysters. In the store, it's all local and good.

This area is located on a land of clay limestone-calcaires soil (no shale but sandstone) but is only practical harvesting between 15 September and 10 October. The range consists of a white wine, a rosé wine and six reds, all in AOP. Among the most notable are the History Times (old Carignan vines), in Sol Maggiore (beautiful assembly of Grenache and Syrah) and the Grand Arc reserve where a tip of Mourvèdre spices the Carignan-Grenache assemblage.

The Leferrer couple knows the game, since Hervé was the manager of the Romanée-Conti estate in Burgundy. Installed in 1989, they cleared the land, prepared the plots, and planted Syrah and Grenache for the reds, and Roussanne, Viognier, and Muscat for the whites on this clay-limestone plateau. The vines feel at home here, and the small, totally controlled production meets these very carefully studied consumption criteria: for the whites and rosés, early bottling to be consumed in their youth and, conversely, barrel ageing for the reds, storage for at least a year before being put on the market.

The domain of Auzines owes its name to persistent oaks whose acorns and small leaves are agitated over the vineyards. All grapes harvested on the field are typical of the Corbières: Carignan, Grenache and Syrah, and Bruno Bernet, the enologist and winemaker of the domain, he focuses on improving the quality of its red vintages, thus; he enhance the soil and limits production to the best mature grapes. Fleurs de Garrigues is the main vintage of the domain, its cassis and blackberry flavors perfectly blends with rosemary, thyme, lavender and broom, which are typical of the surrounding scrubland. The domain offers a warm welcome, and the tasting of their AOC is a pure delight.

Here is a cellar which stands proud despite its 106 years... but isn't it said that wine gets better with time, then a cellar, so think about it! A little historic anecdote: did you know that the cellar of Lézignan is the first cellar in the department and the second in France? Thus, there are some remains like these wine barrel cars acquired in 1952 or these huge wine barrels (old barrels) of 30,000 litres, which is equivalent to 40,000 bottles! Le Chai des Vignerons is a story of men and women: winemakers cultivate the vine, shape the landscape, bring their harvest when the time comes, then oenologists take over to offer us some pretty bottles in red, white, and rosé. You will find the AOC Corbières, IGP Oc, Pays Cathare's wine and IGP Hauterive-Aude. A very attractive range of wines like this little rosé to drink chilled in the shade of pine trees or this nice full-bodied red that accompanies our local specialities. Our favourite is the "Folie douce" vintage from late vintage. Do not hesitate to discover the wealth of this cellar, filled with lovely vintages. In addition, the expert advice of Michele will guide you in your choice. For groups, visits on reservation with tasting: about 45 minutes.

CHÂTEAU ÉTANG DES COLOMBES

More than two centuries ago, the pond of Lézignan was the fishing place preferred by the archbishops of Narbonne, now disappeared, it gave place to many plots of vineyards that Château Etang des Colombes perfectly exploits. Here, for four generations, the work of the vineyard has been guided by the same goal, a quality of the grapes at the harvesting so that the material testifies to the specificity of the ground in the glass. A superb underground cellar was dug for the barrel aging. You can visit it, just like the museum of the property which has belonged to the Gualco family for a century. Gris des Colombes, very fruity in the mouth, a summer wine par excellence, or the sweet wine with taste of honey and jam, walnut with a very good length in the mouth, it is divine with foie gras or roquefort. Since 2001, the method has changed to improve. Inspired the Alsatian late grape harvest, here, the grape is collected at the end of October then it is directly pressed, vinified and put in barrels. Château Etang des Colombes offers a unique wine that is not to miss. Do not hesitate to get there (by appointment) to taste and enjoy rates as sweet as their viognier passerille!

This castle has belonged to the Rigal family since 1906, known for having created the company of Roqueforts Rigal. Since 2003, Laurence Rigal has been running the estate. At the château, you will of course be able to taste the wines of the estate, such as the emblematic Réserve de Laurence (feminine vintage) or the white and red Impatience vintages, but you can also visit the cellar, the imposing 11th century noria and the 15th century tower which houses old tools of the wine world and offers an exceptional panorama of the vineyard and the surroundings.

Since the 80's, the Greuzard family dreamed of making wine. This was done in 1987 with the purchase of parcels of carignan in Sallèles-d'Aude. The development of the farm continued in 2001 with the purchase of the Domaine de l'Herbe Sainte. On their land, the winegrowers produce in a reasoned and environmentally friendly way. It is also at the Domaine de l'Herbe Sainte that 4 superb, spacious and well appointed gites are offered, facing the beautiful swimming pool.
