In the heart of the Roussillon plain, this former gulf filled by the alluvium of three rivers, the Cabestany terroir is composed of a mixture of rich, fatty or silty soils, interspersed with rocky areas. Among the terraces staggered according to the three rivers are the Cabestany terraces, formed by rolled pebbles and alluvium. Inaugurated in 2005, the Cabestany sales cellar, adjacent to the Cave Coopérative, is located in the heart of the village. The Vignerons du Vallespir is a group of 70 winegrowers who have adhered to the values of cooperation since 1949. The vineyard extends from Céret at the gates of Vallespir to Le Boulou and includes some villages in the Aspres at the foot of the Albères. This variety of terroir can be found in the wines, which range from the fruitiest to the most robust. In summer, special tastings are organized as well as a village market in the streets of Le Boulou on Thursday and Sunday mornings.
