Located 75 km from Campeche, it is a small town with a colonial feel and colorful houses, located on an ancient Mayan settlement. Its San Francisco de Asís church was built on a pre-Hispanic platform in the 16th century. According to the locals, this is where the best cochinita pibil is cooked. It is eaten in the morning, around the kiosks facing the central square, accompanied byagua de cebada, a barley drink with cinnamon, lemon and ice. The curious traveller will stop at the small museum of archaeology, or perhaps even at the rural and discreet archaeological zone of Xcalumkin, about fifteen kilometres away.
