Go there, because you don't get there by chance. A neighborhood restaurant where newcomers are just as welcome as regulars, who follow the results of the Castres Olympique as much as the slate. The excellent Nicolas Revol has turned his establishment into a gourmet enclave, an urban refuge. The cuisine is generous and tasty, with a short menu featuring such must-tries as gourmet mustard andouillette and entrecôte, not to mention tartares in summer and the marvellous cassoulet in winter. A fine wine list, with good bottles available for purchase. Foie gras to order at the end of the year. Privatization available. A restaurant with a soul.
