The know-how here is genetic. In this family fish farm, the oldest in Aquitaine, the aim is the reproduction of trout for restocking south of the Loire, from Hendaye to Nice to northern Spain. Already the father had caused a real revolution, when he made contact with the Chileans, making forerunners in the southern hemisphere from where new fish farmers sent eggs, especially to the Kerguelen Islands. Nowadays its fish farming is semi-industrial but close to the natural environment: earthen bottoms and rocks. Result: a production of 30 to 40 tons per year, retail sales, catering, communities and central purchasing. New turn by opening the fish farm to tourism. Presentation of the company from birth to the farm through the eggs purchased, fed with compound feeds, highly regulated for a minimum of one year, until the trout portion (about 250 g) is obtained and then put up for sale.
