At the helm is Frédéric Pommiers, whose passion for patisserie goes back to childhood, and who has worked in such astonishing and demanding establishments as L'Elysée, the Hôtel du Palais... and also in Australia and England. Using exceptional raw materials and creativity, the pastry chef has been creating an excellent range of cakes for 30 years... The inimitable Basque cake is the house specialty.
