Patrick is a professional cook and also makes pork pies, Basque blood sausage and other "biperitif" and ropes.

Ferme Aguerria produces piment d'Espelette PDO which, after all the different stages of production, becomes pimento powder. It's tasty and spicy, ideal as an accompaniment, and available in jams, salts (from Salies), mustards, oils, jellies... Jean Molène is the sixth in a long line of winegrowers who have worked the land at the Domaine de la Gardelle since the 19th century. With respect for the land and the environment and maintaining traditions with the reintroduction of draught horses for light soil work, he produces several high quality wines in organic farming. Wines made in Corrèze since 1850 from merlot and cabernet-sauvignon for the redand chardonnay and sauvignon for the white worthy of the greatest French sweet wines.

This bakery-pastry shop is a must in the Basque Country. Bertrand and Émilie's signature product is artisanal sourdough bread, with a multitude of variations, and an old-fashioned sourdough made from beer, which is left to ferment for 30 hours. The Akerbeltz brewery in Ascain supplies the beer and feeds the sourdough. Bertrand, a pastry-chocolate-confectioner, has honed his skills in top establishments in France and Asia. To be sure of finding a quality cheese, don't hesitate to head for Xavier Ropert's truck. This enthusiast will guide you in your choice and help you select the cheese you like best. At the confluence of the Isle and Dordogne rivers, Fronsac is a quality wine-growing area. The vineyard is said to be the first historic vineyard in the Bordeaux region. Elgarrekin Farm invites you to discover its goat farm. Me, Grenadine, Gribouille and my 89 girlfriends arrived on May¹, 2010 at the age of 3 months in a goat farm fitted out for our well-being. Our feed is partly produced on the farm. You have a choice of cheeses: fresh, creamy, or matured in the form of crottin, pyramid or log. There's sure to be one to your liking. Don't hesitate to try our goat's tomme. You'll find this traditional know-how on the markets of Saint-Palais and Bayonne.

Located in Esnazu, high above the Aldudes mountains, the farm has two passionately-practiced activities: breeding Manex Tête Noire and Tête Rousse ewes, and producing farmhouse PDO Ossau-Iraty cheese. Farmhouse sheep cheeses made from raw PDO Ossau-Iraty milk, with the particularity of maturing in wet cellars, which is atypical in the valley. Visits are organized by appointment to better understand the different stages of production. In the opinion of gourmets, this is undoubtedly one of the best Basque ewe's milk cheeses that you can also take home.

Alexandre Clochard's meat terrines are inspired by his grandmothers' cooking, and each creation is named after a grandparent. Ingredients are sourced within 30 km of his home. He imagines delicious recipes based on beer, chanterelle mushrooms, green garlic... and produces them all year round, using traditional methods. On the sweet side, he makes Clochettes du Poitou (his childhood nickname)! He roasts nuts (almonds, hazelnuts, etc.), then wraps them in sugar and chocolate. A delicious treat!

In Ascain, between Saint-Jean-de-Luz and Saint-Pée-sur-Nivelle, in his workshop, where you're irresistibly drawn by the scent of vanilla and other perfumes, he makes a wide range of Basque specialties: savoury versions such as petits salés de la Rhune with ewe's milk cheese and Espelette chilli pepper, and sweet versions such as Kaïoux plain.
