At the Saint-Martin-d'Arrossa pediment, Arño, Maïté and Betti invite you into their majestic ^15th-century farmhouse, with its 300-sheep barn, its maturing area, and above all, for connoisseurs, the tasting of delicious farmhouse ewe's milk cheese Ossau-Iraty (PDO), a genuine guarantee of milk production by 3 breeds of ewes: Basco-Béarnaise, Manech Tête rousse and Manech Tête noire. Established in Béarn and the Pays Basque since time immemorial, they are fed on pasture, forage and GMO-free cereals.

Four generations of bakers and confectioners have succeeded one another in this establishment, which is firmly rooted in the square and smells deliciously of bread. It's as much a part of our heritage as the Commanderie (opposite) and the church. Our bakers serve a loyal clientele a wide range of natural breads, viennoiseries and homemade pastries. Ferme Etchearria in Ossès is one of the leading producers of ewe's milk cheese. Between rearing its 200 mother ewes, processing according to ancestral rules of manufacture and maturing with scrupulously enforced specifications, direct sales at the farm and presence at markets.

Jean-François Maïtia and his team excel in both original and classic creations, all made with locally sourced products and ingredients. On the bakery side, you'll find a wide range of breads and viennoiseries. Pastries include tarts, entremets, mignardises, Basque cakes with pastry cream, salted butter caramel, chocolate and a wide range of cakes. Chocolates and ice creams, nothing but goodies for gourmets of all ages.

With more than 300 different beers, including a majority of Belgian beers, beer lovers need not worry! As for the neophytes, they can count on the knowledge of the owners. Once you've done your shopping, you can enjoy your beer fresh on the spot. The atmosphere of the Beer Bar really invites you to linger and appreciate the bubbles and the bitterness. Château du Coureau is a 68-hectare family estate that has been farmed for five generations, and is surrounded by part of its own vineyard. Blanc des Cabanes (Semillon and Sauvignon grapes) was born from the marriage of oyster farming and viticulture, in the heart of the Arcachon Basin. Bottles of this wine mature for several months in deep waters right next to the oysters. Château de Thenon is a 12 ha wine estate in the commune of Razac de Saussignac, in the centre of the Saussignac appellation. Joël Evandre, an atypical and well-known character in the Bergerac vineyard, took over this vineyard located between the slopes of Monbazillac and the Pays Foyen in 1988. The production consists mainly of dry Bergerac, the terroir being the most favourable for the Sauvignon and Semillon grape varieties. But the red, rosé and mellow wines are just as qualitative. Each of the farm's pigs is raised for 8 to 11 months on a traceable, non-GMO diet. This allows them to have a meat richer in taste. The company has chosen sustainable agriculture with some of the pigs raised on a straw bed, because unbalanced meat does not allow for good salting. The farm's ham has three IGP Bayonne Ham approvals and is aged for 14 months. The farm also offers pâtés and livers, cheeses and ready-made meals, all of which are successful.

The history of the Reich family estate has always been guided by passion. On 50 hectares of land, 25 of which are Cru Bourgeois de L'Argenteyre, the land, benefiting from an oceanic climate, gives life to wines of character. The grape varieties are composed of 40% Cabernet Sauvignon, 40% Merlot, 15% Petit Verdot and 5% Carménère. The vinification is carried out in concrete and stainless steel vats. Then follows 5 weeks of maceration, during which the grapes are pressed in a vertical hydraulic press to preserve the best of the fruit. Nice welcome.

The truffle has long been a mystery as to its nature and origin. Today, we know it's a mushroom, a subterranean cousin of the morel. There are around ten varieties of truffle in Europe. On the cheese road, come and meet Tote, who proudly opens the doors of his farm for a tasting and a tour of the workshop (sheepfold, ripening room).
