LA PETITE GARE
Read moreThis former railway station of Uzès that connected Remoulins to Alès is an astonishing stopover. Not disused for everyone, it became a restaurant where you can eat on the docks in the summer. Don't worry, no more train passes! The building has, since its renovation, large windows and a terrace facing the vegetation which has gained between the rails. In correspondence with the Haribo factory, the chef Silvère Vivien combines his cuisine with a multitude of natural flavours. Based on fresh vegetables and regional products, the mixtures are bold: goat pastilla carpaccio and fresh spinach and chorizo with Vers honey or Petite Gare aromatic beef tartare, wasabi ice-cream, not to mention the duo chocolate fondant and caramel heart with fleur de sel, rose petal ice-cream. A travel in the middle of the history full of new and inventive flavours, with multiple aromas. This train station restaurant is really worth the trip.

L'ASSIETTE PROVENÇALE
Read moreIn Saint-Ambroix, the Provençal Base is a family affair. Joël, chef for forty years, and Viviane, who is in the dining room, welcomes you in their restaurant to make you discover their culinary jewels. Here, everything is indicated on slate, and between the room (30 seats) and the shaded terrace (60 seats) to get to the ground. Thanks to his forty-year anchor in the profession, Joël plays his oldest restaurant in Saint-Ambroix. He distilles his art in the kitchen while Viviane is charged with desserts, entrance and room service. Their recipes, finely crafted from fresh and regional products, change regularly according to the season and according to the arrivals of local garners and producers. During our passage, we could taste the menu of the day: percolates to the brandade of cod, juniper berries and the Puy green lentils, flowing to chocolate or white cheese, coulis of fruit. At the card, salads, fish and meat put water in the mouth: the salads of cevenol country, routs, gambas, cod brandade, pork, chicken, duck, boar, beef… Better to book!

HOSTELLERIE DE LA REINE HORTENSE
Read moreThe Hautes-Pyrenees served as a haven for many characters throughout history. Hidden in the Cauterets Valley, Hostellerie de la Reine Hortense bears the name of one of its most famous hosts: in the eighteenth century, the queen of Napoleon and mother of Napoleon III came to take the waters in Cauterets would have slept a night of thunderstorm. In 1941, Basque refugees hidden there and indoors, frescoes testify to the cruelty of the Second World War. Restored in 1973, they add an artistic note to this high-altitude restaurant. The master of the premises, Pierre Duthu, offers a traditional and tasty cuisine that makes the meat a great part of the wood. Coast of beef, lamb, skewers to 4 meat including lomo, duck duck: We love these roasted specialties with fresh potatoes and fungi. Other options such as the excellent house garnish, pickle tomatoes, or the juran trout filet are real delicacies. Pancakes, blueberries or Grand-Marnier or an ice-cold nougat finish a great meal in a warm and warm setting.

But whether you are on the quay or the village side, the base is the same.
