Founded in 1978, the domaine has expanded over the years. In 1981, a parcel of Pouilly-Fuissé called "Clos sur la Roche" was purchased and partially planted. Domaine Bonnard is a winery located in Saint-Andelain, near Pouilly-sur-Loire. The estate was purchased in 1951 by the current owner's grandfather. Today, the estate covers 10.85 hectares and produces mainly Sauvignon-based wines, with three Pouilly Fumé wines featuring different aromas and flavors. The estate also uses a Chasselas grape to produce Pouilly sur Loire and quality sparkling wine. The estate's plots benefit from a favorable climate thanks to their proximity to the Loire, and have a predominantly south-westerly exposure. Soils vary from Kimmeridgian marl to Villiers limestone and flint, giving the wines different characteristics. Domaine Belleville has been undergoing a re-enchantment since it was taken over by owners aiming for excellence at all stages of their production, starting with an organic conversion launched in 2017 on the 18 ha property. Céline Houde, an organic market gardener, works on her 1 hectare farm where many varieties of vegetables are grown, including local and forgotten vegetables such as bouejo, a dry bean from the Morvan that used to be widely cultivated. A method of cultivation based on permanent mulching, and a short sales circuit, favouring direct sales on the farm and at local markets. Coming from a family of farmers, the agricultural engineer Yann Boissenet started working in the vineyard only a dozen years ago. Since then, more than anyone else, he loves to introduce the wines of the Aillantais, a territory that includes 4 winegrowers and some 25 hectares of vines. This is where the grey burgundy, typical of the region and with an onion skin colour, is produced. In addition to this, the winegrower produces a dozen or so cuvées, including a white burgundy chardonnay, a red pinot noir, ratafias and crémants de Bourgogne.

This former ^18th-century Ursuline convent is an extraordinary place where the Boisset family's wines grow. With 2,000 hectoliters, 1,500 m² and a height of 15 meters, this monumental and surprising project was realized by Frédéric Didier, chief architect of the Monuments Historiques, and inaugurated in 2018. A sumptuous place between earth and sky, to be discovered during tasting tours available by reservation only. The stained glass windows and green roof add to the unusual character of this surprising cellar, and add to the oenological journey.

The hillsides produce mainly white wines and are sun-drenched at sunrise, like "En Grimorin" and "Aux Plantes", near the conservatory vineyard. They are floral for the chardonnay, much more typical for the savagnin, with a minimum of 18 months in barrel. The Parfums de Terroir boutique was born from the union of several producers associated in a GAEC. Here, the focus is on red fruit: strawberries, raspberries, blackcurrants, morello cherries and redcurrants. The little berries are assembled, prepared, cooked, stewed and even glazed. It is an excellent idea to set up a Comté cheese dairy in Poligny, at the southern roundabout, not far from the A39 motorway exit.
