Romain Leggeri, a former salesman, now follows the "slow" path of his 200,000 snails. They graze in the parks of his completely renovated Bresse farm. A poet with his feet on the ground, the snail farmer's philosophy can be summed up as "respect for the animal and its plant habitat". The entire production honours the Jura, the Pays de Gex and Burgundy. Hence the recipes with Savagnin, Comté, butter from the neighbouring cooperative, Gex blue cheese and wild mushrooms.
