At the helm is Sébastien Brela, who cut his teeth at Charmes-Chambertin. His cuisine is subtle and full of flavor, using the finest produce, often from the Herve region. The service is as elegant as the menu, which changes every two months. Meat and fish are given pride of place, but vegetarians are not forgotten, with options for starters and main courses. On Wednesday and Thursday evenings, a menu available in addition to the usual formulas allows diners to sample the chef's three-course cuisine, with aperitif, wine and coffee included.

Here, the menu oscillates between local and refined cuisine, following seasonal trends. Classics include roast camembert and ham with old-fashioned mustard. Salads and pastas complete the menu, with a variety of suggestions that can be accompanied by regional beers. A lively place, it sometimes hosts concert evenings in an artistic setting, depending on the artist's work on display. An ideal spot for a good time, the brasserie is located near the famous stag sculpture, L'Appel de la forêt.

The Esca'Lindt brasserie welcomes diners in a contemporary setting that has recently been repolished. The setting is now really nice, modern and colorful, as is the terrace when the fine weather arrives. The menu features traditional Belgian dishes, such as vol-au-vent, homemade Liège meatballs and American minced beef. Every month, a new menu is proposed, including a starter and a main course. An interesting lunch option is also available. Oenophiles will be delighted to discover the fine range of wines, including organic ones.

An old house with an old-fashioned interior, where the fireplace, old floors and exposed beams create a warm atmosphere, where you can enjoy traditional, well-crafted French cuisine. Specialties (homemade foie gras, calf's head, knuckle of ham), salads, but also daily specials at union prices, a great way to enjoy a hearty, tasty lunch. There's always a great atmosphere in this front bar. The thirty-seat terrace is ideally positioned for enjoying the sunshine in the peaceful village of Thimister.

This is the gourmet brewery of the Hostellerie du Peiffeschof. In the kitchen, Miguel Giltaire follows the seasons and alternates traditional recipes in the grandmother's way and creations of the moment. No fixed card, nothing but inspiration. This Art Nouveau house looks like a gigantic dollhouse! The trademark is the scaling bench where each sea creature looks as if it has just come out of the water. You can share a Maris platter and a bottle of muscadet or a Jumbo pan with a bottle of champagne. Or the other way around... Nestled on Chimay's Grand-Place, where it's always a pleasure to stroll, the Grand Café is an ideal place to stop for a drink or a bite to eat: burgers, fresh pastas, pizzas and salads (the table's strong point), at reasonable prices and in gargantuan quantities. Black and white walls, wood, high chairs and zinc: the place is friendly, well thought-out and orchestrated. In the kitchen, Nicolas revisits the classics. He kicks things off with a Parmesan crème brûlée. What a surprise! Cod fillet on mousseline and crunchy vegetables... copious for a starter! What follows is just as generous: morel mushrooms surround sweetbreads and a full-bodied truffle jus! Finally, the caramel-salted butter moelleux is his specialty. For a good quarter of a century, this small restaurant has been offering hearty and tempting brasserie dishes in a nice Parisian bistro decor where the walls are initialled by comic book authors. Efficient cooking with these grills (their great classic "single-sided", served with a butter-mustard-scallion sauce and a gratin dauphinois), fish, pasta, salads without forgetting some canaille dishes: roasted marrow bone, cassoulet, andouillette 5A. BRASSERIE COCHAUX

With its tired mirrors, murals and weathered woodwork, the Cochaux brewery exudes an atmosphere that is half Art Nouveau, half old-fashioned. The regulars come back and the faithful stay, a guarantee of quality and authenticity. For those with small appetites, the menu offers a choice of omelettes and salads. It's good, it's prepared with fresh products and it's a bit expensive for a classic cuisine. But it's close to a zero-fault menu... To shine in the evening, tell them that Felix Cochaux was an engineer and invented a new type of drag boat.

This charming 13th century farmhouse is home to a family business that has made a very good name for itself today. In a very pleasant rustic decor (exposed beams, red bricks, an imposing fireplace...) you will enjoy simple and well-executed dishes with generous portions. The suggestions change regularly according to the arrivals and the seasons. Beautiful pieces of meat and fish are cooked. The establishment also proposes typical regional dishes: Flemish carbonnade or hot toast with maroilles. You will also appreciate the aperitif board with an assortment of Bruges cheeses and home-made charcuterie. And if you still have room, you can enjoy one of the home-made desserts. The friendliness of the staff completes this country break in all simplicity. We disconnect the time of a meal, and we ask for more.
