Two brothers are at the origin of this economic project with a social aim. Fabien, who was a specialised educator and wanted to set up new projects of accompaniment, and Samuel, a works manager who wanted to give a more human meaning to his work. The duo therefore created their craft brewery with the aim of employing people in integration, with a view to a sustainable return to employment. Today, the brewery employs two people in integration on the brewing/packaging part, has just recruited a brewer and plans to complete the team with a third employee in March 2020. Christophe Maillard has taken over the family farm since 1991 and has grown 16 hectares of vines to produce wines from the sablons area, mainly from muscadet, but also from the gros, Sauvignon, gamay and Lotus Pearl. Although grouped within a radius of 1,5 km, this vineyard has a wide variety of basements and is characterized by its rich and complex soils, which gives it high regularity from one vintage to another. During the seasons, the operation of the vineyard takes place by observing and respecting the environment. This method of production is part of the TERRA VITIS process and received its first recognition in 2002. To continue in the process and in the interest of sustainable viticulture, the exploitation was qualified as reasoned agriculture by an organization recognized by the State in 2005. Michel Bregeon cultivates 6 ha of muscadet of average age of about forty years. Here, we do in the reasoned culture, minimum treatments, and considering the thin layer of soil covering the gabbro slopes, organic manure represents the essential element of the inputs. He also tries to stay at 50 hl per hectare, hand-picked and must be among the last to put his portoires directly into the press so as not to cause the grapes to suffer. No yeast either, chaptalization almost non-existent, put in aerial tanks at the beginning and put on lees in glass tanks by simple gravity. Its nutmeg remains on lees for at least 4 years, to provide all the richness and food essential to great wines. Each vintage therefore depends a lot on the sky, try the 2000 cru bourgeois, 50 months aged on lees and honoured with two stars in the Hachette guide. Michel Brégeon has joined the group of winegrowers (there are 10 of them) who also produce this great local muscadet called the gorgeois. Moreover, the 2000 is also a reference here. At the opening, it releases its minty notes and pear and lemon flavours. A rich and full palate... A must! Finally, it should be noted that the vineyard began its organic conversion in 2018, a conversion that should be completed by the end of 2019.
