The Vignerons du Pallet estate is located in the town of Le Pallet.

Two brothers are at the origin of this economic project with a social aim. Fabien, who was a specialised educator and wanted to set up new projects of accompaniment, and Samuel, a works manager who wanted to give a more human meaning to his work. The duo therefore created their craft brewery with the aim of employing people in integration, with a view to a sustainable return to employment. Today, the brewery employs two people in integration on the brewing/packaging part, has just recruited a brewer and plans to complete the team with a ^third employee in March 2020. The two brothers produce their own organic hops, and produce their own organic beers. Beers with fresh and powerful aromas. To date, La Tête haute is a range of 6 permanent beers, special beers (IPA, Bread&Roses, brewed with bread and rose flower...) and other surprises to come. Christophe Maillard has taken over the family farm since 1991 and has grown 16 hectares of vines to produce wines from the sablons area, mainly from muscadet, but also from the gros, Sauvignon, gamay and Lotus Pearl. Although grouped within a radius of 1,5 km, this vineyard has a wide variety of basements and is characterized by its rich and complex soils, which gives it high regularity from one vintage to another. During the seasons, the operation of the vineyard takes place by observing and respecting the environment. This method of production is part of the TERRA VITIS process and received its first recognition in 2002. To continue in the process and in the interest of sustainable viticulture, the exploitation was qualified as reasoned agriculture by an organization recognized by the State in 2005. Here you will meet a real passion that will make you rediscover the muscadet! And as a bonus you will discover the small hamlet of the Ep-de-Lecourbe, typical of the vineyard.

The bottles, both restaurant (excellent) and cellar, are located on the market side of Talensac. It is a cellar worthy of the name, with nearly 700 references. From the door, rows of boxes and coffers overflowing with bottles hang the eye of the connoisseurs. On the right, a door opens on the treasures of Mickaël Ravier: Montcalmes, Rayas, Badiane and Romanée-Conti. Welcome to Crawl in Thouaré-sur-Loire, near the Belle-Étoile traffic circle. It's not about swimming but about brewing, or more exactly about brewing since we are in a micro brewery producing on the spot "dapper" beers of quality. Vincent and Stan invite us to discover their range of 6 local craft beers, completed with ephemeral beers according to the season. There is also a range of softs with natural drinks such as kefir. As for the beer, they all have river names and invite you to travel. Discover the Yuba, California Common style, a traditional brown beer, the Arz, a Breizh Pale Ale, a recipe brewed with buckwheat and hops: a beautiful golden blonde. The Crawl Agrios is served exclusively in the excellent restaurant L'Envol in Thouaré. With the beer you can also make soap like the Emouss'tillant in partnership with the Fabrique de Flo, a soap maker in Nantes. Good to know that after the brewing days you can recover the spent grains. Once all the sugar is extracted from the barley, it is the operation of de-drying which consists in taking out all the grain. These spent grains can be used in crackers, bread, cookies... or simply mixed with your compost: nothing is lost!

The wine-growing operation covers about 40 hectares, on land where the first vines were planted in the th century. Muscadets are planted in five different soils. Country wines come from 7 varieties: chardonnay, cabernet franc, cabernet sauvignon, abouriou, melon, white and pinot gris. The area also proposes a traditional crude method, the "Tourlandise" and semi-sparkling grape juice.

Mafana rum is the first original spirit created by Saka Spirits in France. The flowers are passionately grown organically, on healthy soil, without any inputs on their farm in Loire-Atlantique. The flowers of Brède Mafane are harvested by hand from August onwards and give the incredible aromatic profile of Rhum Mafana. Anthony imports an amber rum from the Dominican Republic, a 5 year old blend and a 3 year old. This passionate oenologist works on his 25 ha farm to produce and sell Muscadet Sèvre et Maine sur lie, gros plant du Pays Nantais, Chardonnay, Gamay red or rosé, Egiodola rosé or red as well (Basque name but 100% local production!), sparkling wine (Perles de la Chevrue) and grape juice or sparkling wine (without alcohol)... To accompany the selection and discovery of the wines, this is what the two managers (Sisters and Jean-Louis) have been offering of this favourite teacher. To facilitate the journey of your mind, ten groups have been established by Wine and Independence, from champagne to soft wines, by white, rosé and red, whether they are soft or dry, fruity or not. Each month, wines are selected for their quality and highlighted: sometimes zoom in a region, a vine or a country, as foreign wines are also available (especially Chile). There are some small jewels, such as Alsace muscatel, or a domaine du Clos des Fées (côtes-du-roussillon). Château de l'Hyvernière, which is deeply rooted in the history of the region, extends its 58-hectare vineyard over the communes of La Chapelle-Heulin and Le Pallet, some thirty kilometres from Nantes. Since 1998, the Brewery of the Bouffay, now housed in an old forge in Carquefou, is working to develop a production that is part of a local economic circuit and respectful of the environment (it participates in particular in the development of a barley stream from organic farming). Exceptional, the communal crus appellations Gorge et Clisson and Monnières Saint-Fiacre are aged for many months in vats. Michel Bregeon cultivates 6 ha of muscadet of average age of about forty years. Here, we do in the reasoned culture, minimum treatments, and considering the thin layer of soil covering the gabbro slopes, organic manure represents the essential element of the inputs. He also tries to stay at 50 hl per hectare, hand-picked and must be among the last to put his portoires directly into the press so as not to cause the grapes to suffer. No yeast either, chaptalization almost non-existent, put in aerial tanks at the beginning and put on lees in glass tanks by simple gravity. Its nutmeg remains on lees for at least 4 years, to provide all the richness and food essential to great wines. Each vintage therefore depends a lot on the sky, try the 2000 cru bourgeois, 50 months aged on lees and honoured with two stars in the Hachette guide. Michel Brégeon has joined the group of winegrowers (there are 10 of them) who also produce this great local muscadet called the gorgeois. Moreover, the 2000 is also a reference here. At the opening, it releases its minty notes and pear and lemon flavours. A rich and full palate... A must! Finally, it should be noted that the vineyard began its organic conversion in 2018, a conversion that should be completed by the end of 2019.

Fromenteau Castle is a private wine estate of 19 hectares, operated for 3 generations by the Braud family. The vineyard bears the name of a former castle whose origin dates back to 1260. You can admire two superb underground cellars that the operators have set up in educational space, especially for the attention of the school and the families to whom they offer several animations, including: 20/20 in the cellars (games in the educational area, visit of the wine cellar, tasting of the wines of the Castle) but also a rally: the legend of the Golden Calf (walks in the vineyards in search of the Calf d'Or, visit of the teaching space and tasting of the wines of the Castle). The construction of Briacé castle dates back to the th century. It is one of the oldest areas of the nantais vineyard. Bois Joly is located in the Pallet, 20 km south-east of Nantes. It is a family farm of 30 hectares of old vines averaging 30 years, and 60 years for the oldest. The owners are from parents and grandparents Vignerons winemakers. The quality approach is very important in this area. The vines enjoy the lightest possible chemical treatment in order to best respect the environment. A delicate pressing makes it possible to extract the best juice. The latter will then be carefully débourbés before being finely vinified with suitable temperature.

Domaine du Haut Bourg is a winery located in Bouaye, in the Loire-Atlantique department. It specializes in the Muscadet Côtes de Grandlieu appellation. The estate, which has been in existence for four generations, extends over 40 hectares of vines.
