The talent of the chef draws from these delicacies and invites to the table of the daring dishes such as fillet of turbo with olive oil or the sole seasoned with a mushroom fondue. We also recommend apple sweetbreads and their financière sauce, a subtle and delicate creation. Local is never far away and fresh vegetables accompany each dish, to better sublimating them. The traditional cuisine changes with time and surprises follow the seasons. In a modernised dining room with shades of grey, the desserts are in the same excellence and roasted pear tarte tatin or in syrup competes with a choice of delicious pancakes, especially those with blueberries or Armagnac. Le Chalet de Biscay ensures the cuisine of an old smallholding providing group meals from 30 people or those of the major events of life.

Inside, the grey walls and soils associated with stone and wood, the 3 levels in the same volume, modern luminaires and the panoramic stove boostent the structure and the sculpted voliges of sober floral frescoes. The tables covered with nice beige linen are a happy omen for the arrival of the dishes. We offer a wide selection of fine dishes prepared by Julien Canton, a promising young chef. An appetizer served on a slate makes it delicious to wait for the dishes. No need to detail the dishes, everything is succulent! On the terrace, the decoration is more sober, but the surrounding nature is responsible for making the difference: with waterfalls as a backdrop, you are in the heart of nature.

On the terrace to enjoy the typical atmosphere of Lourdes or in the room in the heart of the beautiful windows for a more cosy atmosphere, in Palacio each place is that of the King. The chef likes to compose real, improved local cuisine and the map is a symphony of local flavours that it is good to discover. Bigourdan cassoulet, roast rôti in foie gras, tournedos accompanied by morels, ris and lamb chops in Cognac juice: here all the meat is French and Pyrenean. A quality to which the restaurant is very attached and which has built its reputation. The beef coast for two people served with its small vegetables, potatoes, sauce and salad is one of the essential features of this establishment. Some of them come only to the pizzas, rolled by hand, to the old, they display a dough so fine that many purists like the best of the Marian city! On the spot or to take, to judge, we will say just that they are faithful to the spirit of the house: excellent.
