Read moreIn Saint-Ambroix, the Provençal Base is a family affair. Joël, chef for forty years, and Viviane, who is in the dining room, welcomes you in their restaurant to make you discover their culinary jewels. Here, everything is indicated on slate, and between the room (30 seats) and the shaded terrace (60 seats) to get to the ground. Thanks to his forty-year anchor in the profession, Joël plays his oldest restaurant in Saint-Ambroix. He distilles his art in the kitchen while Viviane is charged with desserts, entrance and room service. Their recipes, finely crafted from fresh and regional products, change regularly according to the season and according to the arrivals of local garners and producers. During our passage, we could taste the menu of the day: percolates to the brandade of cod, juniper berries and the Puy green lentils, flowing to chocolate or white cheese, coulis of fruit. At the card, salads, fish and meat put water in the mouth: the salads of cevenol country, routs, gambas, cod brandade, pork, chicken, duck, boar, beef… Better to book!

Having belonged to the monks until 1664, the Sans Culottes during the revolution then with private owner, it became a restaurant with since 1988 guesthouse. This beautiful stone building dominates the landscape and blends in a lush garden where the bamboo is omnipresent. Fountains and swimming pools of pagodas punctuate the exuberant decor of old magnolia and cedars. The plantation of bamboo has the reputation of being one of the oldest corner. The decor in the rooms is surprising, a happy mix of sailing boats, swords and weapons, ironwork and paintings. Enjoy a meal in the garden will allow you to enjoy water freshness and the shade. Local is honoured: taste the pélardonnade with potatoes, bacon, onions, pélardon and crème fraîche, let yourself be surprised by the quail mooses muscat sauce or the lamb shanks.

In this organic and fair trade bean to bar chocolate factory (from bean to talette), Corinne makes us taste an organic almond praliné chocolate from her own production. Here snacks are joy and discovery! The range of chocolates on offer is impressive! And here, everything is organic and worked with local products... Creations such as white chocolates with liquorice, organic white gianduja with chilli pepper. We have it, with an erect taste, subtle in the mouth, light, leaving chocolate and hazelnut aromas in the mouth for a short while. It is an organic white chocolate from Peru that really keeps its promise! A small room where chocolate is present on all the walls and where Corinne in love with chocolates never stops making you discover them. For the holidays and after tasting these treasures, all we have to do is take them away and recommend them.
