In AOC Saint-Chinian, a rosé de saignée is made from syrah, grenache and cinsault, offering a fresh, heady nose, harmonious and thirst-quenching. Located on a rocky land, the Escary family, vigneron from father to son since 1830, has their many varieties in the middle of the garrigue. After the manual harvest, the preparation of each wine takes into account the particular character of each plot depending on the land, its exposure, its altitude, the vine it wears in order to extract the best aromas from the grapes, the finest tannins. Stocking in oak barrels precedes the assemblages which will give four vintages to discover: Temptation, Paradox, Enigme and Beating.

Founded in 1750 on a hillside overlooking the Orb valley, this estate belonged to the Abbaye de Foncaude until the French Revolution. It was subsequently managed by several winegrowing families, before being taken over by Isabelle and Eric Perret in 1996. From the moment of purchase, the passionate duo restructured the estate to make it one of the jewels in the crown of the Saint-Chinian appellation. Their organically farmed hectares produce red, white and rosé AOP Saint-Chinian and IGP Pays D'Oc wines. These nectars regularly win awards.
