It was here in 1962 that the Dominican monials created a biscuitery to support the community. On Wednesday, it is "oven day" with each time 420 kg of biscuits. Cookies packed the rest of the week, then sold on the spot at the Monastery of the Monastery or ship throughout France. With their know-how, the sisters make and market Chalais biscuits, which, like Proust's famous Madeleine, evoke the flavors of our childhood. Natures, without eggs, without preservatives and colorants, they are perfectly digestive and perfumed with the coconut pulp, honey flower, vanilla, orange or anis. On 2 hectares, he grows organic apricots, apples, plums, blackcurrants, strawberries, raspberries, redcurrants and blackberries. In his artisanal workshop, he transforms them into sweet delights: candied fruits coated in chocolate, fruit jellies, but also nectars, syrups, jams and even nougat, hence the name of his small business: Au nougat ardéchois.
