the Defaix family have been winegrowers for 4 centuries. In other words, they know their way around the terroir! They welcome you to their 7 cellars dating from the 8th to the 12th centuries, to the Lys de Chablis (their hotel) and to the bistro Le Mâchon Vigneron, where local (and homemade) cuisine blazes. Like the escargots au chablis Defaix or the jambon braisé à la chablisienne, whose original recipe comes from the family. We also liked the piece of beef with Soumaintrain sauce from the Gillot farm.

Laroche has 3 locations in Chablis: the boutique, the Obédiencerie and the Hôtel du Vieux Moulin. The Obédiencerie building is emblematic of Chablis heritage. You'll love the tasting tour of these 9th and 12th-century cellars and a 13th-century wine press, followed of course by a wine tasting. Domaine Laroche's production includes many Chablis wines, of course, but there are also others from all over the world. There are also some great ideas for discoveries, such as a picnic in the vineyards. We love it!

DOMAINE WILLIAM FEVRE

Great name of the Chablisien, this house has everything to please. Located in the main street, and close to a bistro, the William Fèvre estate is situated in a 19th century neo-gothic property, based in a former convent. The estate produces all the local appellations: petit chablis, chablis, chablis premiers crus and chablis grands crus. DOMAINE DU CHARDONNAY

Arnaud Nahan and Thomas Mabille manage the 35 hectares of this vineyard planted with Chablis A.O.C. Producers of 5 premier crus, their approach is resolutely environmental: since 2020, the estate has been certified with HVE level 3 and Eve Vegan labels. Proof of the high quality of this estate, its production is exported as far as the Nordic countries, and regularly wins awards.
