the Defaix family have been winegrowers for 4 centuries. In other words, they know their way around the terroir! They welcome you to their 7 cellars dating from the 8th to the 12th centuries, to the Lys de Chablis (their hotel) and to the bistro Le Mâchon Vigneron, where local (and homemade) cuisine blazes. Like escargots au chablis Defaix or jambon braisé à la chablisienne, whose original recipe comes from the family. Not to mention Chablis andouillette with Chablis sauce and soumaintrain.
