Owner's Message
The Ursuya butcher's, delicatessen and caterer in Ustaritz in the Basque Country, near Bayonne and Cambo-les Bains, offers you the best of the Basque Country, prepared by a team of passionate young people.
All our meat comes from local breeders. The beef is selected by Axuria and matured in our maturing room for a minimum of 15 days.
Aubrac milk-fed veal and Romane lamb come from Gaec Carricondo in Domezain.
Our Label Rouge farm poultry comes from Maison Garat in Souraïde.
Last but not least, our farm-raised Duroc pork, from the Iratzia breeding farm, gives us marbled, tasty meat. This enables us to produce our sausages and charcuterie in the traditional way.
On the catering side, come and discover our homemade dishes: lasagne, moussaka, gratin dauphinois, axoa...
Our cheese comes from Onetik, and our ewe's milk from hélène Etchelecu d'Estérençuby.
In the grocery and wine cellar, you'll find all the specialties of Maison Mayté, Les Délices d'Aïta and La Cave d'Irouléguy.
