Between Saint-Jean-Pied-de-Port and Mauléon, this artisanal cheese dairy transforms and matures sheep's milk from the production of 17 shepherds. Compliance with the specifications guarantees milk of exceptional quality (ewes fed on hay and non-GMO cereals) and a top-quality artisanal cheese with a natural rind.
