Professional beekeepers with recognized expertise, Jean-Claude and Corine Salles perpetuate a traditional art by transhumantly moving their hives from the Basque mountains to the hillsides of Béarn, harvesting true "crus de la nature", representing floral diversity. In their honey house, they extract, select and refine honeys for bouquets ranging from the sweetest - acacia and hawthorn flowers - to the most distinctive, chestnut, and also make heather honey gingerbread and jams according to Amatxi recipes. Opening time and information on L'APICULTEUR D'ITXASSOU
From July 15 to the end of August, open Monday to Friday, 10am to 1pm and 2pm to 6pm - out of season, closed on Wednesdays and open Monday, Tuesday, Thursday and Friday, 9:30am to 12:30pm and 2pm to 5:30pm. Owner's Message
Honey, flower pollen, propolis, wax... it is to obtain all these natural products from the hive that the APICULTEUR d'ITXASSOU breeds, watches over and looks after its bees in the heart of the inner Basque Country.
In order to offer typical and authentic flavours of bouquets representative of the local flora, this "shepherd of bees" moves his hives following the flowering season from April with the first Acacia honey flows, to September for the "Callune" heather. With a real know-how, this producer for more than forty years also transforms a part of his honeys into gingerbread, energetic specialities based on honey, pollen and royal jelly by refining and combining his "crûs de la nature" offered in liquid or creamy texture. In its shop adjoining its honey house, also its jams inspired by the traditional recipes of its AMATXI, rich in candied fruits, including the famous "Black Cherry"jam to be enjoyed locally with a good sheep's cheese.

Bon miel et des confitures extra.
On avait l'impression de la déranger. On a voulu avoir quelques explications sur le miel et on la voit partir derrière le magasin et en revenant pas un mot. Une chose est sûr c'est que nous n'y retournerons plus jamais !
