Coffee was first introduced to Bayonne in the 15th century by a Jewish population fleeing the Spanish Inquisition. Over the centuries, coffee consumption became increasingly popular. Kafé Beltza, an artisan roaster since 1930, is an institution with the Moraïz brothers, voted best roaster in 2012 by the culinary magazine Grand Seigneur, and who perpetuate the family know-how.
