The fruitière de Salins-les-Bains is an agricultural cooperative founded in 1928, specializing in the production of Comté, one of the region's most famous cheeses. It is located in an exceptional natural environment, surrounded by the Jura mountains and fir forests. Every day, it collects fresh milk from over 50 local producers, all of whom are committed to sustainable agriculture. The Comté cheese production process is highly rigorous, respecting traditional manufacturing methods.

La fromagerie de Chevigny specializes in the production of high-quality artisan cheeses. Located in the Bourgogne-Franche-Comté region, it offers a wide range of cheeses, including Comté, Morbier, Mont-d'Or and many others. The cheese dairy attaches great importance to the quality of its raw materials and the traditional production methods it uses. You can discover all these delicious cheeses by visiting the Chevigny cheese dairy. Comté is famous for being different from other cheeses from higher altitudes.

The reputation of this fruit farm is well established: it ensures the in situ maturing of its production (8,700 wheels) which comes from the 3.3 million litres of milk produced annually. The cheesemakers Pascal and Mathieu and their teams produce 2 appellations, Comté and Morbier, as well as a tomme cheese called "La Fertoise" and a raclette cheese. Fruitière du Val d'Amour is a dairy cooperative founded in 1952, which has rapidly become a major player in the field of milk processing into quality dairy products. In the center of Poligny, a very contemporary shop does not only sell cheeses. If the store's decay and sign changed, its original vocation remained the same: wine and cheese. There are 90% of biologic and natural wines, including the best of the Jura (yellow wine, macwine, savagnum savagnum…). Other regional nectars (sauces, monbazillac, champagnes, Burgundy wines, whiskies and rheus of the world, absinthes…) are presented by a passionate wine cellar. Very elegant packages are for all budgets. On the cheese factory side, six county affinations are honored (from 6 to 24 months). The sheep and many other local cheeses are declared in quality. Fabien and Guillaume are a pair of cheese-makers with unique expertise. They make their comtés at their Pont-du-Navoy dairy, some of which are organic. You can discover a range of comtés, morbiers and tommes du Jura, as well as a whole selection of local products. A second store is located in the village of Montrond, about 30 minutes away: Au Chalet Modèle. Every Thursday, you can book a visit with the cheese-makers, who will show you the workshop and the cheese-making process.

In 1985, the Donzé couple took over the 30 goats of a colleague who was going out of business. Since then, the herd has tripled in size, as their home-made production has become so successful. The farmers also own Montbeliarde dairy cattle. And the chickens also graze around the farm. The goats' milk is transformed into crottins (fresh, semi-dry, dry, ashy), white cheeses, corks and farmhouse tomme. The prices are very reasonable. A stop for shopping is a must with this family with an exemplary welcome.

Fromagerie Poulet has four generations of expertise, mastering the entire cheese-making process, right through to maturing. This cooperative, created in 1836, is located on the banks of the Seille, in the heart of the vineyards between Lons and Château-Chalon. It groups together 23 farms from 15 surrounding communes and processes 8 million litres of milk per year into raw milk cheeses. Comtés take pride of place with a range of cheeses that can be matured for up to 24 months. Then come morbier, tomme and raclette. Like its neighbours, this dairy has also become a local shop. The reward: a gold medal in 2020 at the Concours Général Agricole for its old Comté.

Since 1970, this company has specialized in mail order sales. This cheese factory is a co-operative that manufactures the cheese with cow's milk from the member breeders. A "visiting gallery" will make you discover the secrets of fabication, the process of processing milk milk on our plates, as well as the history of the country, strongly linked to that of the cheese. This small nonagenarian dairy unit continues to evolve within its 1932 walls. Set back from the road halfway between Salins and Champagnole, this cooperative is brand new. It is in fact the transfer initiated by "Les Monts de Joux", of the one that was operating in Cernans. On the field side, Pierre-Yves Cannard, with his 33 years of experience, is in charge of production. He processes 5.5 million litres of milk per year from 18 producers. This state-of-the-art cheese factory includes a beautiful sales area for regional products. Of course, you can find the Comté cheeses produced on site, but also the great Jura classics.
