Philippe Butin, who has run the estate since 1980, has just handed over the pruning shears to his son Kevin and Aloïs, both of whom are equally passionate about their work. The white Savagnin is matured in 228-litre barrels, and the yellow wines impress even the most demanding tasters. Concerned about the environment, Emmanuel and Nathalie have been managing the estate's 9.5 hectares of organic farming since 2018. Their demands continue during the harvest when time is no longer important, the right maturity of each parcel is expected for the picking of the grapes. The harvest is done by manual selection of the grapes where the eye has all its importance, then the vinification is subject to rigorous monitoring. This wine cooperative is the youngest in the vineyard, with 17 winegrowers and some 40 hectares covering the Côtes du Jura, Etoile and Château-Chalon. The whites are the most important with 80% of the vineyard in chardonnay and savagnin. The annual production is around 2,200 hectoliters. The culture is more than reasoned, an orientation turned towards the bio since even the residues of treatment are recycled on the spot. Do not hesitate to discover the crémants du Jura. The son of winegrowers who carried their harvest from generation to generation to the local cooperative, Jean-Michel Petit became independent in 1990. For a long time in the practice of integrated pest management with manual harvesting, he has been farming organically since 2012; chemical weeding in particular has been abolished since 2004. Each hillside of the 7 hectares of the farm is managed separately in order to respect its identity. Fascinated by the work of the vine and the wine, he sometimes organises outings to discover the terroirs, the grape varieties and the winegrowers' know-how, glass in hand, with a traditional meal at the end. This year our preference was for a 100% chardonnay crémant brut. A geyser of bubbles oriented by a vigorous cord, a nose of plums "queen claude" and a suppleness in the mouth that invites to be served again for fear of forgetting it. No, it's a joke. It will delight you in any case, even when tasted alone.

With 33 vintages of yellow wine and 31 awards, Xavier Reverchon honors the 3 generations that preceded him. His 2011 was again claveliné at the 2021 breakthrough. His 6 ha are dedicated to this exceptional product, the Savagnin. A variety that the Polinois also declines in other vintages with "Les Boutasses" or "La Réserve" for example. The soils are ploughed and the vines are free of insecticides. The unfiltered reds also have their place, including a rare red macvin since 1979. Annie and Jean-Luc settled here in 1991. Today, the couple owns 11 hectares, mainly of white wines, including the most famous AOC Château-Chalon. A particularity here: the yellow wines are matured in the attic! The Mouillards favour above all varietal wines. On the red side, we really appreciated this "Cousin", a cousin of the macvin, made with fine grapes.

What an irresistible rise Patricia and Christian have made since 1976, when the Pêcheur parents farmed just 1 ha. They now produce 8 hectares of 5 Jura grape varieties. What's special here is the age of the vines, which range from 35 to 50 years. The crucial stage is obviously the harvest: first the vin de paille, for which the bunches are pampered, then the chardonnay for crémants and still wines.
