The Vandelle family is one of the oldest and most recognized dynasties in the Jura. Philippe, who has taken over from his father Bernard, welcomes customers to the family winegrower's house, perched on a hillside. It looks out over Mount Morin, whose impressive slope hosts most of the 15 hectares of the estate. The latter includes 60% chardonnay and 30% savagnin with a predominance of white marl. The young stellian has long favoured sustainable agriculture. A shower of stars (gold medals) crown his work, especially for his crémants and yellow wines. Almost thirty in 10 years! This is a fine example of an ambassador for the "Vignobles et Découvertes" label. Straw wines are very delicate. We were amazed by the Crémant du Jura blanc brut, a regular bubble all in finesse, a frank effervescence and a smooth length. He should also hit the target in the biggest confrontations.

The dynasty began when Claude settled in the village in 1600. Pascal, the current boss, continues the adventure with the same rigour under vaults engraved in 1560! With the Tissot comes at first sight the religiously convoluted "Marc du Jura". No need to travel the world to find international specialities. The burnery produces "Prohibition" labelled Jura whiskies (aged in barrels of macvin, straw wine, yellow wine, or even trousseau...). In 2000, it goes even further than organic farming, with biodynamia: enrichment of the soil with natural compost, treatment by infusion of plants (herbal tea, orty…). For the past three years, to further strengthen the natural defenses of the vine and the environment, it has replaced the Bordeaux boiling with essential oils, mainly citrus fruits (citrus, grapefruit, orange bark…). One of the few winemakers in France has abandoned it! Its principles also extend to vinification without chemicals to target zero sulfite. Exception wines (Yellow Wine, Savagnin, Poulsard, Chardonnay), raised in oak barrels according to the Jurassian tradition, very requested.

DOMAINE PHILIPPE BORNARD

It is a beautiful family home perched on the heights of Pupillin. The view is breathtaking but it is from the cellar that you have to go down! The master of the house, Philippe Bornard, happily shares his passion for wine, flying alone since 2005. He used to deliver his harvest to the fruit farm. He explains the cultivation of organic vines, the natural vinification, in the mind of a pioneer like Pierre Overnoy. There, he remembers how his grandmother prepared the "ratafia", a kind of ancestor of the macvin. It evokes the vine of before, tells how it allows a wine to ripen naturally... long macerations and maturing in tuns. The winegrower, whose fox is the mascot, gives amusing names to his wines: the Bodyguard, the Ginglet, the Chamade, the Point barre, the Point barre, the Tant mieux... The Labet family illustrates the evolution of viticulture in the south Jura. The ancestors were polyculteurs-winemakers, i. e. they cultivated vine plots among other cultures. In the 1970 s, Alain Labet and his wife Josie specialize and expand their winery, which now covers 12 hectares. DOMAINE FRÉDÉRIC LORNET

Frédéric Lornet is based in the former 15th-century abbey of Genne, where the Cistercian monks already cultivated vines. A worthy descendant of a father who cherished the trousseau grape variety for which the area is now famous, and of a grandfather who was a cooper, this winemaker has no shortage of talent. He expresses it by pampering the famous "trousseau aux dames". Céline Gormally has taken up the challenge of organic viticulture without hesitation. On her 4 ha estate, she uses no herbicides or pesticides, weeds every other row, uses compost as fertilizer and distributes it with her mare Octivia. Part of the estate is managed with the "Terre de Liens" landholding company, which rents out land acquired through public savings to solidarity projects or organic farming. Priority is given to tenants, but Céline also sells her moderately profitable production.
