By updating this guide, we were very sad to learn the disappearance of Lambert's Fish fish plant in Saint-Loubès, one of the few lamproie canning in Bordeaux. Not discouraged so we have come to browse to find the cannery that is still preparing according to the traditional recipe this puts an end and sought. We found it in Jugazan, within a family cannery that occupies me and Mrs Dufour and their two charming girls. Here, they perpetuate the lamprey recipe (leeks fried in duck fat, lamproie blood sauce, Saint-Emilion wine, dumplings and spice mixture), but not only. This small company manufactures locally and handcrafted a considerable number of good mamé recipes. They are carefully preserved before joining the wine cellars.
