Guilhem Raynaud, an epicurean at heart, has set up his cheese corner a stone's throw from Place de la République. Keen to make the best-aged cheeses accessible to all, he offers advice on his products with friendliness and professionalism. His stall is a real place dedicated to local production and short circuits, and he's looking ahead to extending his range to include tableware items, which will enhance his creamy products. To round off your meal in style, there's nothing like one of his platters...

Among the 250 or so producers of Blanquette de Limoux, Maison Guinot is an estate worth mentioning for its friendly, human-scale approach. Since 1875, blanquette has been produced by hand in a family-run business, with bottling on site and manual riddling of 30,000 bottles daily. During the 45-minute "Bulles et Lumière" tour, you'll discover the cellars and all the stages involved in making this sparkling wine. The tour is completed by a 3D video, and your visit ends appropriately with a tasting.

Nestled in the heart of a valley, on a land once cultivated by monks of Saint Hilaire's abbey, the domain de Martinolles perpetuates the age-old tradition. Here, you can taste its blanquettes, crémant, chardonnays and Pinot Noirs that are often rewarded. The pale yellow and crystalline coloured chardonnay reveals scents of dry apricot and vineyard peach. Blanquette de Limoux Carte Noire, with a beautiful bright yellow colour and golden reflections, has foam rope supported by slender and many fine bubbles. It subtly blends notes of white peach with scents of white flowers, making it perfect for an aperitif, for cocktails, or to accompany meals.

Rucher de l'Ours was founded in 1975. Today, Philippe Weibel runs 300 hives in the Pyrenees, producing around 10 tonnes of a wide variety of honeys every year. Within a 100 km radius of the honey house, the bees find a wide variety of resources in a pollution-free environment. Among the products on offer here are some twenty honeys, such as dandelion honey, with its pronounced taste slightly attenuated by the taste of wild cherry, very bitter arbutus honey, woodruff honey...

In the heart of Cathar Country, this beautiful estate of the Upper Valley of the Aude extends over 150 hectares. It cultivates vines on 14 hectares, and, since 2001, a limestone plateau has been planted with 500 olive trees. It is a charming place to discover the local wines. Fourteen hectares of vines with various grape varieties make up the vineyard: You will find Chardonnay, Chenin, and Mauzac which are used to make the Blanquette de Limoux, but there are also Syrah, Merlot, Cabernet Sauvignon, or Cabernet Franc. The estate has focused, since 2008, on organic farming. You can enjoy the wines, crémants, and other Blanquettes, some of which have been awarded in the cellar where fans will enjoy doing their shopping.

Located in the middle of the Aude's Pyrenees at the foot of Pic de Bugarach, Ferme de Janou offers good local products, from an agriculture respectful of the ecology: cassoulet, duck stew, tripe... but also foie gras produced on site, rillettes, or dried duck breast, jams, fruit juices, wine or onion confit... you will find at the shop of the farmhouse all these good things and even more. For a gift in the form of gourmet baskets, for example, or to treat yourself, Ferme de Janou is a must-visit gourmet stopover in this sector of the department. And for those who do not have the opportunity to come on-site, an online store is available. Finally, Ferme de Janou is also a restaurant next to the shop, where you can taste all these specialties.

A veritable Limoux institution since 1936, Maison Bor perpetuates ancestral know-how in the manufacture of nougat and chocolates. Let yourself be tempted by their specialty, the Tap de Limoux, a small chocolate made with Chardonnay marc in the shape of a champagne cork, or by the unrivalled creaminess of their nougats, made in copper cauldrons. The range of nougats is as varied as the packaging, sold individually, in boxes or in sachets. All our specialties are made with local, high-quality raw materials.

La Massotte is a farm, in the noble sense of the term, and with the air of Noah's Ark. Respectful of animal welfare, Joris puts all his energy into developing short circuit products, with his atypical breeding of black pigs, his succulent charcuterie, his lambs, his flock of "Rouge du Roussillon" sheep or his production of olive oil from his 4 hectares of olive grove, treated with natural fertilisers! Here we go from the meadow to the plate, in a perfect search for quality and balance, a return to our roots just a stone's throw from Limoux.

Nicolas, as a worthy heir of the family, will make you discover the complexity and the differences between crémants and blanquettes, patiently elaborated, with grape varieties such as white chenin, chardonnay, pinot noir or mauzac. A shower of medals comes every year to crown these vintages through the cuvées "Ma maison", "Prestige", "Domaine Rosier" or the inevitable cuvée "L" real favourite. As for the still wine, you can appreciate a 100% chardonnay in AOC Limoux or in Vin Pays d'Oc. An intimate address not to be missed, to visit absolutely.

Sarah and Lionel Landauer welcome you to their shop with a thousand delicacies in the heart of town. They offer a range of dishes, each more appetising than the last: Limoux specialities, regional dishes, home-made duck and goose foie gras, desserts and charcuterie, but also gourmet delicatessen products, such as gingerbread, jams, mini meringues, roasted coffee from Lézignan Corbières... In short, you will find everything to delight your taste buds from starter to dessert, with service and a smile to boot!

Founded in 1929, the Anne de Joyeuse winery takes its name from the Duke of Joyeuse, to whom the seigneury of Limoux was given by Henri III in the ^16th century. 3,000 hectares of vines produce still wine in AOP Limoux (red and white) and IGP Pays d'Oc (three colours). Anne de Joyeuse is also committed to protecting the environment with the Protect Planet® initiative, and to enhancing the human aspect of wine production. Founded in 1946 as the Société des Producteurs de Blanquette de Limoux, the company became known as Sieur d'Arques in 1990, in homage to a lord of the Pays d'Oc, who adored the "flacons" of blanquette. Today, 193 member winegrowers, committed to their terroir, produce and promote this ancestral local culture. Fans of bubbles come here to taste the excellence of "sparkling wines" and "still wines", representing 1,578 ha of vineyards.

If you push the door of the Brûlerie des Augustins, looking for new flavours and a little respite, you will find a place out of time. The hostess, Stéphanie, always welcomes you with a broad smile, in an intimate decor and atmosphere, with fragrances of home-roasted coffee, teas from around the world, tasting accessories and fine porcelain. On Friday morning, the free tea tasting will make you discover perfumes from elsewhere.

Aper'oc is a 100% Limoux creation! The Cavale cooperative distillery and its partners are behind the "Religieuses" creams. They have created 3 recipes using only Limoux marc alcohol, to which they have added natural mint flavorings for one, and mandarin or lemon peel (traditional or organic) for the last two. Low in sugar and alcohol (15°C), "Religieuses" are the perfect way to end a meal. More festive and also very pleasant in cocktail mode: 1/3 mandarin orange and 2/3 Première Bulle de Sieur D'Arques and a dash of sparkling water
