Guilhem Raynaud, an epicurean at heart, has set up his cheese corner a stone's throw from Place de la République. Keen to make the best-aged cheeses accessible to all, he offers advice on his products with friendliness and professionalism. His stall is a real place dedicated to local production and short circuits, and he's looking ahead to extending his range to include tableware items that will showcase his creamery products. To round off your meal in style, there's nothing like one of his platters...

Among the 250 or so producers of Blanquette de Limoux, Maison Guinot is an estate worth mentioning for its friendly, human-scale approach. Since 1875, blanquette has been produced by hand in a family-run business, with bottling on site and manual riddling of 30,000 bottles daily. During the 45-minute "Bulles et Lumière" tour, you'll discover the cellars and all the stages involved in making this sparkling wine. The tour is completed by a 3D video, and your visit ends appropriately with a tasting.

Rucher de l'Ours was founded in 1975. Today, Philippe Weibel runs 300 hives in the Pyrenees, producing around 10 tonnes of a wide variety of honeys every year. Within a 100 km radius of the honey house, the bees find a wide variety of resources in a pollution-free environment. Among the products on offer here are some twenty honeys, such as dandelion honey, with its pronounced taste slightly attenuated by the taste of wild cherry, very bitter arbutus honey, woodruff honey...

In the heart of Cathar Country, this beautiful estate of the Upper Valley of the Aude extends over 150 hectares. It cultivates vines on 14 acres, and, since 2001, a limestone plateau is planted with 500 olive trees. It is a charming place to discover the wines of the region. Fourteen acres of vineyards with various grape varieties make up the vineyard: You will find chardonnay, chenin and Mauzac which are used to make the blanquette stew, but also syrah, Merlot, Cabernet Sauvignon, or Cabernet franc. The estate has focused, since 2008, on organic farming. You can enjoy the wines, crémants and other blanquettes, some of which were awarded in the vault, where lovers will enjoy doing their shopping.

Located in the middle of the Aude's Pyrenees at the foot of Pic de Bugarach, Ferme de Janou offers good local products, from an agriculture respectful of the ecology: cassoulet, duck stew, tripe... but also foie gras produced on site, rillettes, or dried duck breast, jams, fruit juices, wine or onion confit... you will find at the shop of the farmhouse all these good things and even more. For a gift in the form of gourmet baskets for example, or to treat yourself, Ferme de Janou is a must-visit gourmet stopover in this sector of the department. A veritable Limoux institution since 1936, Maison Bor perpetuates ancestral know-how in the manufacture of nougat and chocolates. Let yourself be tempted by their specialty, the Tap de Limos, a small chocolate made with chardonnay marc in the shape of a champagne cork, or by the unrivalled creaminess of their nougats, made in copper cauldrons. The range of nougats is as varied as the packaging, sold individually, in boxes or in sachets. All our specialties are made with local, high-quality raw materials.

La Massotte is a farm, in the noble sense of the term, and with the air of Noah's Ark. Nicolas, as a worthy heir of the family, will make you discover the complexity and the differences, between crémants and blanquettes, patiently elaborated, with grape varieties such as white chenin, chardonnay, pinot noir or mauzac. A shower of medals comes every year to crown these vintages through the cuvées "Ma maison", "Prestige", "Domaine Rosier" or the inevitable cuvée "L" real favorite. Sarah and Lionel Landauer, welcome you to their shop with a thousand delicacies in the heart of town. They offer a range of dishes, each more appetizing than the last: Limoux specialities, regional dishes, home-made duck and goose foie gras, desserts and charcuterie, but also gourmet delicatessen products, such as gingerbread, jams, mini meringues, roasted coffee from Lézignan Corbières... Founded in 1929, the Anne de Joyeuse winery takes its name from the Duke of Joyeuse, to whom the seigneury of Limoux was given by Henri III in the ^16th century. 3,000 hectares of vines produce still wine in AOP Limoux (red and white) and IGP Pays d'Oc (three colors). Anne de Joyeuse is also committed to protecting the environment with the Protect Planet® initiative, and to enhancing the human aspect of wine production. Founded in 1946 as the Société des Producteurs de Blanquette de Limoux, the company became known as Sieur d'Arques in 1990, in homage to a lord of the Pays d'Oc, who adored the "flascons" of blanquette. Today, 193 member winegrowers, committed to their terroir, produce and promote this ancestral local culture. Fans of bubbles come here to taste the excellence of "sparkling wines" and "still wines", representing 1,578 ha of vineyards.

The La Cavale cooperative, which has just celebrated its centenary, is a reference in the Limoux region in terms of agricultural supplies and plant production. But the cooperative also offers a range of products that delight us, all in an eco-responsible approach: Olisoli olive oils - Le Moulin du Sou, Ardence eau de Vie, a craft beer: Alambiquée and the famous Mint, Tangerine or Lemon Crème Religieuse from the Apéroc range. You will find them in the delicatessens and the Gamm Vert stores of the Haute Vallée de l'Aude.

This store, which is part of our urban and rural landscapes, is a delight for gardeners and your furry or feathered animals. We particularly like the Gamm Vert of the CAVALE cooperative in Limoux where the gourmet part of the store and the local products are in the spotlight: oils from the Moulin du Sou, dry and sweet cookies, canned food, cold cuts and meat from local farmers, cheeses, etc. There is also a large selection of local wines, blanquette de Limoux, artisanal beers and the whole range of Aper'oc and its famous Crèmes Religieuses.

Welcome to the historic Nougalet boutique! Until 2022, this was where the company and its manufacturing workshops were based, but following growing success and Éric Monterrat's desire to offer his customers a new gourmet experience, the factory moved to the 6,000 m² site just outside Carcassonne, in Trèbes. Rest assured, the Luc-sur-Aude store remains a superb showcase for Nougalet's expertise, where you'll find chocolates, bonbons, caramels, macoranias and lollipops, all served individually or in boxes.

It is an organic farm where vegetables such as potatoes, leeks, white onions and pumpkins are grown. Aromatic plants are also grown here. Rose, thyme, sage, lavender and rosemary are used in essential oils and flower waters. Since 2003, 10 hectares of olive trees have been planted on the southern slopes of the estate. Its flavours of black olive, Jerusalem artichoke and undergrowth are to be discovered. It is a very nice discovery, full of quality choices!

Frédéric Labourasse's lair has been given a new look and has expanded, after taking over from his uncle. Wishing to offer a complete range of products and qualitative selections to his customers, he offers a beautiful showcase for beautiful bottles, highlighting local still and sparkling wines, Audoises liqueurs, spirits and alcohols. Drinking well is a motto here, the advice is pertinent and professional, come and discover vintages found in the four corners of the department, to taste the soul of this terroir.
