A small, bright, white town surrounded by walls, partially topped by an aqueduct. Serpa is famous for its delicious cheese made from sheep's milk. Thickened with dried thistle petals, it is made from late October to early June. The town was founded by the Romans and has experienced a strong development thanks to agriculture. In 1166, Serpa was conquered by the Moors before being retaken by Afonso Henriques during the Reconquest. The castle was consolidated with a wall under D. Dinis in 1295. The circulation is difficult through the narrow streets: the visit is best appreciated on foot.
