In addition to its exclusive focus on sustainable agriculture, Sem prides itself on producing virtually no food waste. Everything is reused, fermented and transformed, as evidenced by the jars scattered around the room containing strange concoctions. Green tomatoes in brine, cayenne pepper in miso and an army of microorganisms ready to reach your plate. A unique address in Lisbon where it's worth putting your hand in your wallet. There's just one menu at €78 per person and an excellent wine list.
