The Auberge des Canuts is a must-visit address in Lyon. Located in the heart of Vieux-Lyon, opposite Saint-Jean Cathedral, this "bouchon" welcomes you in a warm and friendly atmosphere, with wooden tables, leather chairs and an elegant counter. L'Auberge des Canuts offers generous, tasty cuisine, faithful to Lyon's traditions. Everything is homemade, using fresh seasonal produce. Specialities include pike quenelle with crayfish bisque, andouillette, Lyon sausage and tablier de sapeur with gribiche sauce. You can also try our calf's head or chuck of beef confit for six hours in cognac and red wine, with its hearty mushroom jus. To accompany your meal, the wine list features local vintages, such as those from Beaujolais and the Rhône Valley. The Auberge is also known for its "mâchon lyonnais" menus, offered once a month on Sunday mornings, or by prior arrangement for large groups. This working-class Lyonnais tradition symbolises conviviality and sharing. An exceptional "bouchon" well worth the diversions!
