Emotion is what drives Lyon-based chef Anthony Baud. Drawing on French gastronomic tradition, he interprets dishes in his own distinctive way, with his signature truffle egg or truffle-flavored veal sweetbreads. An excellent vegetarian menu to share the pleasures of Quintessence.
