Pascal is lucky enough to work isolated plots with a beautiful plant heritage, which enables him, among other things, to produce a Chénas entitled "Naturellement", without added sulfite, on grassed plots with young vines. The result is fresh and delicious. On the Juliénas side, the cuvée Les Chers is aged in egg vats, which allow the wine to "circulate", encouraging natural stirring of the lees. As well as being an exercise in style, we salute this winemaker's philosophy.
