The Maison Pascal Massonde
was founded in 1938 in Souraïde, a small village in the heart of the Basque Country, three kilometres from Espelette. For 4 generations, the artisanal know-how of the butcher's and canner's trade has been maintained with the same objective of quality.The Espelette PDO chilli pepper powder comes from our family production, as well as our by-products, made by us in our workshop.
Pascal Massonde represents traditional Basque gastronomy by highlighting the work of local producers. For years, we have been committed to the development of the agricultural sectors of the Basque Country. We are a founding member of the HERRIKO HARAGIA association which promotes 100% Basque meat (animals born, raised and slaughtered in the Basque Country).Our recipes come from grandmothers' precious books. These inspirations have enabled the company to excel in competitions such as the general agriculture fair in Paris or the competition for the best blood sausage in the Basque Country.
